How To make Sweet Potato Biscuits
Ingredients

sweet potatoes, (yams) peeled and diced
4
cups
flour, all-purpose
1/2
cup
brown sugar, light, packed
5
teaspoons
baking powder
1
teaspoon
salt
10
tablespoons
butter, or margarine
1/3
cup
milk
Directions:
1. In a 3 quart saucepan over high heat, heat the diced sweet-potato and enough water to cover to boiling. Reduce heat to low; cover and simmer 12 to 15 minutes until potatoes are fork tender. Drain the potatoes; mash and set
aside to cool.
2. Preheat oven to 425 degress F. In large bowl, combine flour, brown sugar, baking powder, and salt. With pastry blender cut in margarine until
mixture resembles couarse crumbs. Stir in milk and cooled mashed sweet potatoes; mix until just combined.
3. On lightly floured surface, pat dough into an 8 1/2-inch square. Cut dough in half. Cut each half into 10 equal pieces. Place biscuits, 2 inches apart, on 2 large ungreased cookie sheets.
4. Place cookie sheets on 2 oven racks; bake biscuits 12 to 15 minutes until golden, rotating cookie sheets between upper and lower racks halfway thruogh baking time to ensure even cooking.
Serve biscuits warm. Or cool on wire rack, store in tightly covered container to use within 1 day or wrap in foil and freeze to use within 2
weeks.
NOTES: Per serving: One biscuit; 200 calories. 6g fat, 33g carb.

SWEET POTATO BUTTERMILK BISCUITS
1 ¾ cups flour
2 tablespoons light brown sugar
2 ½ teaspoons baking powder
1 teaspoon Kosher salt
½ teaspoon baking soda
6 tablespoons chilled unsalted butter + more for brushing tops
*¾ cup chilled sweet potato puree
1/3 cup buttermilk
The dough:
In a large bowl, whisk together flour, light-brown sugar, baking powder, salt, and baking soda. With a pastry blender or your fingers, cut in 6 tablespoons chilled butter, cut into pieces until the mixture resembles coarse meal, with some pea-size lumps remaining.
In a small bowl, whisk together chilled sweet potato puree and chilled buttermilk.
Stir quickly into flour mixture until combined. Do not overmix.
The shape:
Turn out dough onto a lightly floured surface and knead very gently until dough comes together but is still slightly lumpy, five or six times. (Dough can be sticky, so you can work in up to ¼ cup additional flour.) Shape into a disk, and pat to an even 1-inch thickness. With a floured 2-inch biscuit cutter, cut out biscuits as close together as possible. Gather up the remaining scraps and repeat.
The baking:
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper. Arrange biscuits on the pan – I don’t let them touch so that I can use them for little sandwiches as well as dinner biscuits. Brush with ½ tablespoon melted butter. Bake until golden, rotating once. Bake for 20-24 minutes.
* For the sweet potato puree I bake a few sweet potatoes and remove the skins and smash them and reserve the leftovers for another use.

These delicious sweet potato biscuits have only six ingredients: self-rising flour, butter, sugar, nutmeg, sweet potato, and milk. They are easy to make and will be a nice surprise at the supper table for Thanksgiving or any time of the year.
BTW, this is an affiliate link to the cookie cutters that I ALWAYS use for making biscuits. One of my favorite things in my kitchen!
Ingredients
3 cups self-rising flour
1/2 cup sugar
6 Tbsp. butter
1 cup sweet potato
Nutmeg (a few sprinkles)
About 2/3 cup of milk (a tiny bit more if needed)
1. Mix dry ingredients.
2. Cut in butter until well blended.
3. Mash up cooked sweet potato with a fork.
4. Use fork to mix mashed sweet potato (about a cup*) to the flour mixture
5. Once sweet potato is well-mixed into flour mixture, add milk. Stir in at first with a fork, then gently use your hands to mix the dough until all of the flour mixture is incorporated with the milk and it is holding together into a workable dough. *** DO NOT KNEAD YOUR BISCUIT DOUGH. ***
6. Once it is workable, either pinch off biscuits or using a cookie cutter to cut out desired biscuit size and place on to parchment-lined pan. (You can just grease a cookie sheet if you like, but I prefer parchment paper for baking.)
7. Bake at 450º for about 12-15 minutes. Just check on the biscuits. They'll start browning a bit on top when they are done.

* You can add more if you like. Just play with it, but be careful not to add too much as it will change the texture of your biscuits.

OLD SCHOOL SWEET POTATO ???? BISCUITS (MERRY CHRISTMAS ????)
This is an awesome easy recipe recipe to make for a Christmas ???? morning breakfast
Your whole family and friends will be pleasantly awakened with the awesome aroma and taste with these nice fluffy delicious creations
Recipe
2 1/4 c. all purpose flour
3 1/2 T. Baking powder
1 t. Salt
2 t. sugar
6 T. cold butter
3/4 c. buttermilk
3/4 c.completely mashed baked sweet potato
1 tsp cinnamon
add together all dry ingredients
cut in cold butter until completely incorporated
add milk and sweet potatoes and mix
pour out on floured board and fold over together 4 times to insure nice flakiness
cut out and place on greased pan
brush with 1 beaten egg yolk and 1 t. water
bake at 350 25-30 minutes
brush with melted butter
ENJOY
make 12-20 biscuits
