How To make Swabian Pancakes
1 1/4 c Flour; unbleached
3 ea Eggs; large
1/2 t Salt
2 c Milk
1 t Vegetable oil
16 oz Applesauce; (1 can)
4 oz Raisins
1 t Oil or butter;to grease dish
2 T Sugar
3 T Almonds; sliced and blanched
1 T Butter
Prepare pancake batter by blending flour, 2 eggs, 1/4 t salt and 1 cup of milk. Lightly oil a large frypan and cook 6 to 8 pancakes (2 or 3 at a time). Heat the applesauce and stir in the raisins. Divide the sauce between the pancakes and spread over each top. Roll up the pancakes like jelly rolls and cut each in half with a sharp knife. Grease an ovenproof dish with oil or butter; place pancakes in the dish, setting them up on the cut edges. Blend 1 egg with sugar, 1/4 t salt, 1 cup milk, and sliced almonds. Pour over the pancakes. Dot with butter. Place in a preheated 375 degree F oven and bake for 40 minutes. Serve immediately.

How to Make Swabian Onion Cake - Recipe in description
Try this onion cake for the authentic tastes of Swabia (Southeast Germany), with plenty of bacon. Delicious and filling!
Preparation time: 30 minutes.
Rest time: 2 hours.
Difficulty: Normal

Ingredients for 1 person:
For the yeast dough:
250 g of flour
50 g of butter
½ cube of yeast
1 teaspoon of salt
1 teaspoon of sugar
150 ml of warm milk
For the topping:
500 g of onions
50 g of butter
1 tablespoon of flour
2 eggs
100 ml of fresh cream
Salt
Cumin
75 g smoked bacon, diced
Butter flakes
For the yeast dough:
Make a sourdough. To do this, crumble the yeast in a small bowl and dissolve in a part of the warm milk. Then, add sugar and a little flour and stir until smooth. The dough should have a viscous consistency. Sprinkle with flour, cover and leave to stand in a warm place.
Wait until the sourdough has doubled in size and add some flour. Then, add the salt and milk. Knead the dough and then add the soft butter.
Once the dough is fully kneaded, leave it to rise. Once it has risen, put the dough in the mould. The border height depends on the mould diameter.
For the topping:
Sauté finely chopped onions in butter, stirring for 10 minutes, until soft. This may take you about 10 minutes. Avoid browning the onions. Next, mix in the flour and let the dough cool down. Once the dough has risen inside the mould, add 2 beaten eggs and cream and mix well. Season with salt to taste (onions require a good deal of salt).
Next, add the filling to the dough mould and sprinkle with smoked ham and caraway. Finally, add a few flakes of butter.
Bake on the middle tray at 200 °C for about 35-45 minutes.
Serve hot.

German pancake chicken soup pfannenkuchen German recipe #7 德國薄餅雞湯
This is a traditional german soup, my father in law cooked once for me. The chicken soup is cooked for a good one and half hour with lots of veggies and herbs. The pancake is made fresh to replace noodles.
It's always fun to try something new, instead of eating stir fries everyday. My father in law is a professional chef. I just discovered last week how many cook books he has at home. I'm so excited of every single of them, can't wait to give all of them a try if it's possible.

Ingredients:
For chicken soup about 1 litter-
half soup chicken
1 small carrot
half leek
1/4 celery root/ 50g celery root
1/4 large onion
1 bunch parsley
1 bunch thyme
60-70 ml white wine
1 lemon peel
