How To make Suzy's Lime Cheesecake
CRUST: 1 c Shredded coconut meat
2 tb Flour
2 tb Unsalted butter -- melted
FILLING: 1 Envelope unflavored gelatin
1/4 c Cold water
3 Egg yolks
3/4 c Water
3/4 c Granulated sugar
16 oz Cream Cheese - softened
1/4 c Lime juice
1 t Grated lime rind
Green food coloring
few Drops 1 c Heavy cream :
whipped
3 Egg whites *(Just Whites..
Equiv ) -- stiffly beaten
*A Note from Suzy: As we do not use RAW/UNcooked eggs here in the northeastern United States due to salmonella bacteria I have substituted a product called "Just Whites", it works just as well if not better than egg whites. CRUST: Combine coconut, flour and melted margarine. Press on bottom of a 9-inch springform pan. Bake at 350 degrees F. for 12-15 minutes until lightly
browned. Remove from oven and set aside. FILLING: Soften gelatin in 1/4 c. cold water. Set aside. In a saucepan combine egg yolks, 3.4 c. water 3.4 c. sugar. Stir over medium heat for 5 minutes.
Remove from heat and add softened gelatin and stir until dissolved. Beat cream cheese at low speed while gradually adding gelatin/ egg mixture until well blended. Stir in lime juice, grated lime, few drop green coloring. Fold in whipped cream and stiffly beaten egg whites. Pour filling over cooled crust and chill until firm. Remove from springform and garnish with grated lime rind. In summer decorate serving plate with fresh mint leaves if desired. From the recipe files of suzy@gannett.infi.net

Key Lime Pie Recipe | Easy, No Eggs
This refreshing Key lime pie is tart and sweet with the perfect creamy texture. Key lime pie is not only delicious but super easy to make.
Ingredients (Makes one 9-inch (23 cm) pie)
-Crust
Graham Crackers 12 whole crackers | 170 g
(About 1 ½ cups of crumbs)
Sugar ¼ cup | 50 g
Butter 6 Tablespoons | 84 g
-Filling
Sweetened Condensed Milk 28 oz | 794 g
Sour Cream ½ cup | 120 g
Lime Zest 1 tablespoon | 5 g
Lime Juice ¾ cup | 180 mL
-Whipped Cream Topping (Optional)
Heavy Cream ¾ cup | 180 mL
Powdered Sugar 3 tablespoons | 23 g
Directions
1. Crush crackers into fine crumbs. Combine graham cracker crumbs, sugar and melted butter until evenly moistened. Press mixture into bottom and sides of a greased 9-inch pie plate to form crust.
2. Bake crust in a preheated 350º F (178º C) oven for 8-10 minutes or until crust begins to brown. Cool while preparing the filling.
3. Combine sweetened condensed milk and sour cream; stir in lime juice and zest until incorporated and mixture thickens. Pour over cooled crust.
4. Bake in a preheated 350º F (178º C) oven for 10-12 minutes or until the filling is set with a slight jiggle in the center. Chill thoroughly.
5. To make the whipped cream, whip heavy cream and powdered sugar on medium speed until the mixture begins to thicken. Increase speed to high and continue whipping until medium peaks if spooning over pie or stiff peaks if piping decorations.

QUICK & EASY KEY LIME PIE RECIPE - An easy & delicious dessert to make that is a firm favourite in our house. It is the most requested pudding for birthdays, Xmas & special occasions :)
My version of key lime pie uses ginger biscuits (cookies) & lime zest, as I think the combination of lime & ginger works really well, but you can use digestive biscuits, graham crackers or hobnobs.

INGREDIENTS
300g/11oz ginger biscuits (You can also use digestives, hobnobs or graham crackers)
125g/4½oz butter - melted
397g/14oz can condensed milk
3 large egg yolks
2 limes - juice & zest (finely chopped)
22cm/9inch loose bottom tart tin
METHOD
Preheat oven to 160°C/320°F or 140°C/285°F Fan Oven
STEP 1
Blitz the ginger biscuits into fine crumbs using a food processor (Or bash in a bag with a rolling pin).
STEP 2
Mix the biscuit crumb with the melted butter & ground ginger.
STEP 3
Press biscuit mixture firmly into base & sides of tart tin, & cook in preheated oven for 10 minutes. Leave to cool.
STEP 4
Whisk together the egg yolks, condensed milk, lime juice & zest in a bowl for 5 minutes.
STEP 5
Pour egg mixture into the cooled biscuit base & cook in oven for 15 minutes. Allow to cool & chill in fridge before serving.

Ingredients
75g sugar (⅓ cup)
5g lemon zest (½ tbsp) (~1 lemon)
200 ml heavy cream (1 cup)
30g lemon juice (2 tbsp) (~1 lemon)
5g vanilla powder (1 tsp)
3 lemon shells ( to serve)

How to cook
- Zest a lemon.
- Mix lemon zest and sugar.
- Add cream.
- Stir until it boils over medium heat.
- Remove the boiling mixture from the stove.
- Add lemon juice and vanilla and mix.
- Strain the mixture through a sieve and pour into the emptied lemons.
- Chill in the refrigerator for at least 3 hours.
- Ready to serve.
