SLOW COOKER (SORT OF!) APPLE CAKE
I attempted to make an apple cake using the slow cooker option in my Instant Pot. Things may not have worked out the way I wanted but I still ended up with a delicious cake!

Slow Cooker (Hopefully for You!) Apple Cake
2 cups sugar
1 cup oil
2 eggs
1 tsp. vanilla
2 cups chopped apples
2 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. nutmeg
1 cup chopped walnuts or pecans
1. Beat together sugar, oil and eggs. Add vanilla.
2. Add apples and mix well.
3. Sift together flour, salt, baking soda, and nutmeg. (Next time I make this I will also add a tsp. of cinnamon.) Add dry ingredients and nuts to apple mixture. Stir well.
4. Pour batter into greased and floured bread or cake pan that fits into your slow cooker. Cover with pan’s lid, or greased tin foil. Place pan in slow cooker. Cover cooker.
5. Bake on High 3 ½ - 4 hours. Let cake stand in pan for 5 minutes after removing from slow cooker.
6. Remove cake from pan, slice and serve. Enjoy!

Crust
Ingredients
2 cups flour
2/3 cup + 2 tablespoons shortening
3-4 tablespoons ice water
Make
•Sift 2 cups of flour into a mixing bowl.
•Add shortening and criss cross with 2 table knifes until blended.
•Add ice water slowly until the mixture has the consistency of play dough.
•Using your hands, form a ball with the dough. Lay on a flat surface and roll out with rolling pin to flatten. Carefully lift dough and place in bottom of baking pie pan.
•Repeat this process for the top layer of crust for the pie and set aside.
Apple Pie
Ingredients
1 stick butter
3 tablespoons flour
½ cup brown sugar
½ cup sugar
2 tablespoons vanilla
Dash Tone’s® Cinnamon
8 Granny Smith® Apples
Make
•Preheat oven to 350⁰F.
•Add butter to a skillet on medium heat and melt.
•Add flour, brown sugar, sugar, vanilla and cinnamon to the skillet and blend together. Remove from heat and allow to cool slightly.
•Slice apples and place in a bowl. Pour mixture over apples, coating each slice thoroughly. Pour into pie pan.
•Carefully lay top crust over the top of apples, making sure to pinch the bottom and top crusts together with your fingers. Pinch off any excess crust.
•Bake at 350⁰F for about 1 hour or until crust is golden brown.

Apple-Walnut Cake
1 cup finely chopped walnuts 2 large eggs
1 cup peeled, finely chopped 1 ¾ cups all-purpose flour
Cooking apples 1 tsp. baking powder
2 Tbl. brown sugar ¼ tsp. salt
½ tsp. ground cinnamon 1 (8oz.) container sour cream
1 cup butter, softened 1 Tbl. Vanilla extract
2 cups sugar Cream Cheese Glaze
COMBINE first 4 ingredients; set aside. Beat butter at medium speed with an electric mixer until creamy; gradually add 2 cups sugar, beating well. Add eggs, 1 at a time, beating after each addition.
COMBINE flour, baking powder, and salt; add to butter mixture alternately with sour cream, beginning and ending with flour mixture. Mix at low speed after each addition until blended. Stir in vanilla.
POUR half of batter into a well-greased and floured 12-cup Bundt pan. Spoon apple mixture over batter, leaving a ½-inch border around edges. Pour remaining batter over mixture. Bake at 350° fir 50 to 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan; cool on wire rack. Drizzle with glaze. Store in refrigerator. ( I didn’t and it was fine.)
Cream Cheese Glaze
1 (3 oz.) pkg. cream cheese, softened Dash of salt
2 to 2 ½ tsp. milk 1 ½ cups sifted powdered sugar
1 tsp. vanilla extract
COMBINE first 4 ingredients; beat at medium speed with an electric mixer until smooth. Gradually add sugar, beating at low speed until smooth. Yield: 1 cup.
