How To make Surprise Apple Cake
WALDINE VAN GEFFEN VGHC42A:
2 c All-purpose flour
2 ts Baking powder
2 ts Cinnamon
1 ts Baking soda
1 ts Salt
1/2 ts Ground nutmeg
1 c Sugar
1/2 c Brown sugar; firm pack
4 lg Eggs
1 c Vegetable oil
16 oz Sauerkraut; rinse, squeeze
-dry 1 Granny Smith apple; peel,
-core, grate coarse, squeeze -dry 1 c Walnuts or pecans; coarse
-chop CREAM CHEESE FROSTING 16 oz Cream cheese; soft
1 c Confectioners' sugar
3 1/2 tb Heavy cream
2 tb Orange rind; grate
1 ts Cinnamon
2 ts Vanilla
Preheat oven to 350~. Line bottoms of two 8" round cake pans with waxes paper. Grease and flour pan. Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg in medium bowl; set aside. Mix sugars together in large bowl, breaking up any lumps. Whisk in eggs, then oil, until blended. Stir in sauerkraut, apple and nuts. Add flour mixture and stir just until moistened. Spoon into prepared cake pans. Bake about 35 minutes or until wooden pick comes out clean and cake begins to pull away from sides of pan. Let cool 10 minutes, then invert cakes onto wire racks to cool completely. Spread with CREAM CHEESE FROSTING-Whip cream cheese, slowly adding sugar, until fluffy. UPSIDE DOWN APPLE CAKE #shorts
Apple Caramel Topping:
• 1/2 red apple, thinly sliced sliced
• 1 cup granulated sugar
• 1/4 cup water
Cake Mix:
• 2 cups flour
• 2 tsp baking powder
• 1 tsp salt
• 3 tsp cinnamon powder
• 2 tsp nutmeg powder
• 1 cup unsalted butter
• 1 cup brown sugar
• 4 eggs
• 1 large red apple (pureed)
Preparation
• Preheat your oven to 350°F
• On an 8 inch pan, add parchment paper and neatly arrange apple slices
• On a medium pan over high heat, add your sugar and water. Let it melt until golden, moving around the pan gently (it will be bubbly) and immediately pour on the apples
• Let the caramel cool and drain the excess water that will form
• Prepare your batter by mixing all of the ingredients, then pour it into the pan
• Bake for 45 minutes or until the top is cracked and golden
• Let cool for 15 minutes, flip onto a plate and enjoy!

Ingredients:
- 4 Granny Smith Apples - Peeled and sliced
- 1 Cake Mix Box - (I used French Vanilla for this recipe)
- 1 Stick of Salted Butter - (Salted for the middle layer)
- 1 Stick of Unsalted Butter - (Unsalted for the top)
- 2 Tbsp Vanilla Extract - (Spilt between the Cake mixuture, and both apples mixtures as seen in the video)
- 1 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- Milk to replace the water if using a Box cake mix
- 2 Cups of Sifted Powdered Sugar
- Apple Cider (Add a Tbsp at a time to the Powdered sugar)
Tips:
- Work with Medium to medium High heat for the apple mixtures
- Let the apples cool before putting them into the cake mixture
- No need to cook the apples slices that are going on top of the cake as they will soft once you bake the cake - This is only for the top layer
- Bake the cake according to the Box Instructions
- You can check if the cake is done by inserting a tooth pick and the tooth pick should come out clean.
