6 ea green onions 3 ea tomatoes 6 ea sun-dried tomatoes in oil, -drained 8 oz couscous 4 oz black olives, pitted 2 tb fresh mint; chopped 1 tb each fresh coriander & -parsley; chopped 2 ea 2-3 garlic cloves; chopped 3 tb olive oil 1 ea salt and pepper 1. Roughly chop the spring onions. Dice all the tomatoes. Put the couscous in a large bowl and pour in 600 ml. cold water. Leave to soak for 15-20 minutes or until all the liquid has been absorbed. 2. Mix all the remaining ingredients into the couscous with plenty of seasoning. TO PREPARE AHEAD. Complete the day before. Cover and chill. Serve at room temperature. -----

300 grams (2 cups) watermelon (cut into bite sized cubes) 200 grams (1 cup) Feta or Hirtenkäse (cut into bite sized cubes) 50 grams (2 cups) arugula (or any other greens of choice) Thoroughly washed and patted dry 1 small red onion (diced) (optional) 1 medium cucumber (diced) 10-12 fresh mint leaves (chopped)

Ingredients & Recipe Ingredients: 2 cups couscous-uncooked 2 cups boiling water 1/2 English cucumber with skin - diced 1 red onion-finely chopped 8 radish diced 2 green onions/scallions-finely chopped 1/4 cup chopped cilantro 3 tbsp extra virgin olive oil 1 garlic clove-minced juice of half a lemon salt, crushed black pepper & red pepper flakes to taste
Method: Place 2 cups of uncooked couscous in a large glass bowl Boil 2 cups of water then pour it over couscous. Set aside for 5 minutes While the couscous is resting/cooking in the bowl chop all the veggies Now take a fork and fluff up the cooked couscous Add all the veggies, half the cilantro, salt, black n red peppers to taste Squeeze lemon juice, mix well then garnish with remaining cilantro Wallah! Your Healthy & Delicious Couscous/Summer Salad is ready!
