How To make Sugar Crusted Sweet Potato Biscuits
2 cups all-purpose flour
3 Tablespoons baking powder
1/2 teaspoon salt
4 Tablespoons brown sugar
3 Tablespoons shorting
2/3 cup skim milk
1/2 cup canned or cooked sweet potatoes
1/3 cup sour cream
1- Heat oven to 400 degrees F. Spray cookie sheet with nonstick cooking spray. 2- Lightly spoon flour into measuring cup level off. In medium bowl combine flour, baking powder, salt and 2 -Tablespoons of brown sugar, mix well. Using pasty blender, cut in shorting until mixture is crumbly. 3- In small bowl combine milk, sweet potato and sour cream, blend well. Add flour mixture all at once, stirring until moistened. If dough is to dry add additional milk. 1 teaspoon at a time until dry ingredients are moistened. To form each biscuit drop 1/4 cup dough onto spray coated cookie sheet. Sprinkle tops with remaining 2- Tablespoons brown sugar. 4- Bake at 400 degrees F for 15 to 20 mins. until peaks and bottoms of biscuits are golden brown. Immediately remove from cookie sheet. Serve warm. 12 Biscuits Low fat

Sweet Potato Biscuits
2 c sweet potatoes, cooked and mashed (keep warm)
1 c (2 sticks) butter
3 c all purpose flour
2 heaping Tbsp baking powder
1 tsp salt
1/4 c coconut sugar (or honey, date syrup, or white sugar…if you must)
1/4 c milk
Before beginning this recipe it is extremely helpful to freeze your butter AND a metal cheese grater.
Preheat oven to 400°.
Begin by placing the flour, baking powder and salt in a large mixing bowl and stir to mix well. Using the FROZEN grater, grate the FROZEN butter into the flour, stopping occasionally to toss the butter pieces around to coat them with flour. Add the sugar, milk, and warm mashed sweet potatoes and mix just until the dough comes together; don’t knead it and try not to overmix it. Turn dough out onto a well floured work surface and roll out to about 3/4” thickness. Using a biscuit cutter, knife or whatever you have, cut out biscuits and place on a shiny baking sheet (a dark baking sheet is not advised as it will overcook the. bottom sides of the biscuits while leaving the centers underbaked). Bake in the preheated 400° oven for around 13 to 15 minutes or until the surfaces start to become toasty brown. Serve with uncured sliced ham. Enjoy!
