EASY SUGAR COOKIE RECIPE ~ PERFECT FOR CUT OUT COOKIES
This recipe makes a simple but versatile vanilla sugar cookie with only a few ingredients and no fancy techniques. The dough is easy to work with, you'll be able to roll & cut with ease and they are bound to be the perfect 'go to' cookie recipe for any holiday cookies ????????
This recipe requires chilling your dough, and yes I know, chilling is a pain....BUT rest assured that your patience will be paid off afterwards. I found chilling my cookie dough before and after cutting really helps to prevent spreading during baking. It also makes your dough very easy to manage when it comes time to roll it out and to cut out with perfect defined edges....so trust me when I tell you that it is well worth the wait! ????????????
????NOTE: makes approx 2 dozen of cookies (depending on cutter sizes)
???? INGREDIENTS:
175 grams icing sugar/powdered sugar [US Conversion: 1 ½ Cups]
225 grams salted butter (room temperature) [US Conversion: 2 Sticks or 1 Cup]
1 egg (room temperature)
2 teaspoons vanilla extract (or any flavour your prefer)
1 teaspoon baking powder
420 grams all-purpose flour [US Conversion: 3 ¼ Cups]
???? INSTRUCTIONS:
▪ Cream together butter and icing sugar.
▪ Add eggs and vanilla extract and mix well.
▪ Sift together flour & baking powder, add to the mixture little by little until well incorporated.
▪ Wait approximately 30 - 60 mins before working with the dough as it will firm up slightly.
▪ Roll the dough between baking paper and put it into the fridge for a few hours this will help prevent spreading. When the dough is a bit firmer, take it out of the fridge and cut into desired shapes (lightly dust with flour if necessary).
▪ Place the cut out cookie dough into a baking tray then put it into the fridge again for another 1-2 hours, this will also help prevent spreading.
▪ Bake cookies at 180° Celsius for approx 10-12 minutes (times may vary slightly depending on your oven). Note: Each oven is different, I would recommend you get to know your oven and adjust the time accordingly.
???? USEFUL TIPS for making perfect sugar cookies:
???? Ensure that you ALWAYS use room temperature butter, in the video i have shown you how to check if your butter have reached the correct room temperature, I can't stress enough on how important this is! Test your butter by pressing it, they should give slightly but it should still hold its shape. If you use butter that have melted too much and too soft you will end up with a dough that is too soft and hard to work with.
???? When its time to cut your cookie dough, make sure to keep your cuts as close together to get as many cookies out of your dough as possible. I usually divide my dough into half before rolling them (you would have seen this in my video) and when it comes to re-rolling your scraps after your first cut, I usually add the second half from my un-rolled dough with the scraps and knead them together, then re-roll and cut again.
???? Chill your dough if you want a perfect cut out cookies with define edges. I can't tell you how much chilling really helps my dough to retain they shape and prevent spreading, so for those of you who are impatient out there....if you want perfect cut out cookies I'm afraid you will have to wait and practice being patient LOL

Easy No Spread Sugar Cookies
These no-spread sugar cookies are great for cutouts, perfectly sweet, and totally delicious. Unlike other sugar cookies that become a gloopy mess at room temperature this dough is easy to work with and needs minimal chilling, and of course they Keep their shape when you bake them! Perfect for cut out cookies.

I have a 6qt. Atisan KitchenAid:
This recipe can be cut in half!
350°f (i have convection/fan)
11mins. For 8mm -5/16 thick
Makes about 32-36 3 1/2 cookies
***must use 120g egg at least. Otherwise, it will crumble
1lb. (4 sticks)Unsalted butter room temp
1 cup granulated white sugar
1 cup packed light brown sugar
2 xtra large COLD eggs (without shell at least 120g)
4 tsp. Flavor Extract (whatever combo you call yours)
1010g. All purpose flour (yes, you have to weigh it for best results!) (*If you HAVE to scoop fluff/unpack flour with a wisk then 7.5 cups )
3 tsp. Baking powder (makes cookies tender NOT spread)
1 tsp. Salt (I use Kosher)
Using a paddle attachment
Beat butter & sugars for at least 5 minutes. Add eggs one at a time. Add extracts. Mix flour(for your first time, hold back 1/ 2 cup of flour and add if needed to get the dough to come away from the sides. Different climents and humidities may takeless flour), baking powder, and salt and add to mixer. *(I use wrap cling wrap over the top to make sure the flour doesn't mix out of the bowl and all over me!)
Beat until the dough starts to come together and flour is mixed in.(add the last 1/2 cup until comes away from the sides if still too sticky) Turn dough out and kneed a couple of times before wrapping in plastic wrap. Let rest at room temp for AT LEAST AN HOUR. DO NOT RUSH THIS PART.
This is where the fats/oils soak into the flour to create texture and flavor. It's aging. Aging is good.
Roll out between parchment(dampen the counter lighting to keep the paper from sliding or use a silicone mat). If it seems too soft/sticky, give it a couple of kneeds, it will firm up.
No chilling is necessary.
***You can refrigerate the dough for days or freeze for months.
Here is my Royal Icing:
4oz. Warm water
4TBS. meringue powder (I use Chefmaster)
3TBS. corn syrup
1tsp. White gel color (gives a great base for colors and helps with bleeding)
3tsp. Extract (your preferences and flavor combination)
2lbs. powder sugar (I use all brands, and I never sift)
Wisk the water and meringue just until it is mostly dissolved. Add the rest of the ingredients and mix using a paddle for a full 6 mins on LOWEST speed.
This makes a thick base. From here, add color and water to get the consistency you are after.
I am no expert, but this is what works for me. I hope it helps someone.

These sugar cookies are buttery and tender-crisp. They are made for cutting out into shapes as they hold their shape very well when baking. The dough is super easy to roll out and cut – and you only need just 5 basic ingredients. The cookies won’t puff up, so they are perfect for icing and decorating as you please. They are wonderful to serve plain too. NO SPREAD. NO PUFF. JUST 5 INGREDIENTS!
You'll need:
• 1 cup (225g) salted butter (room temperature)
• 1 1/2 cup (180g) powdered sugar/icing sugar
• 1 large egg (room temperature)
• 1 1/2 tsp vanilla extract
• 3 1/4 cup (422g) all-purpose flour
Cool completely. Serve. Enjoy!
:: HELPFUL HINTS ::
* Number of cookies will depend on cut out size and how thick you roll your dough. For thinner cookies, roll out your dough to 1/8 and 1/4 for thicker cookies.
* Bake thinner or smaller cookies for 8-10 minutes.
* Measure your flour correctly. Adding too much flour will result to crumbly texture or sandy taste when baked. Fluff the flour in the container before scooping it out. Lightly spoon the flour directly into the measuring cup until it mounds well above the top of the measuring cup. Using the back of the dinner knife (non-serrated side is facing the flour), sweep the knife over the top of the cup to remove the excess flour.
* Let your cookies cool completely before frosting them. If they are not cool, the icing will melt.
