How To make Stuffed Veal Breast
1/2 lb Ground beef; lean
1/4 lb Ground pork
1 ea Egg; large
1 c Bread crumbs; soft
1 T Lemon juice
1/8 t Nutmeg
1/2 t Salt
1 x Pepper; to taste
4 lb Breast of veal; with brisket
3 T Shortening
2 t Paprika
2 ea Bay leaves
6 ea Cloves; whole
1/2 t Rosemary
1/2 t Basil
2 c Water
Mix ground meats, egg, bread crumbs, lemon juice, netmeg, salt, and pepper for stuffing. Stuff pocket of veal breast. Sew closed or use toothpicks or skewers. Brown roast in melted shortening in ovenproof casserole. To the drippings add paprika, bay leaves, cloves, rosemary, basil, and 2 cups water. Bake in a covered casserole at 325 degrees F for 2 hours or until veal is tender. Slice veal and serve immediately.

Today’s video demonstrates how to make veal roast in the oven. This perfectly prepared piece of veal served with a side of potatoes is a classic and easy veal roast recipe and it belongs in every aspiring foodie’s skill arsenal.
Don’t worry, you don’t need superpowers to have the roast come out perfectly each time!
All you need is a little motivation and a good piece of veal. The cut used in the video is the veal under shoulder, a moist and juicy piece of a veal perfect for these sorts of oven roasts you can do in the comfort of your own kitchen.
Veal under shoulder is a part of veal shoulder encompassing the first 6 to 7 ribs. Before roasting, make sure to make a few deep cuts on top of the meat so that your veal shoulder roast bakes perfectly and evenly.
A good veal cut can be made even better with a simple and classic veal roast marinade. I’m talking about a super easy 5-min marinade made with mustard, spices and oil. It’s best to marinate the meat and keep it in the fridge overnight.
For perfectly roasted veal keep to the tried, old school advice: let the weight determine roasting length. One hour per 2 pounds (or 1kg) of meat. So for a 2 lbs (1kg) veal piece set the oven timer to 1 hour; for a 4 lbs (2kg) piece set it to 2 hours, etc.
Now we get to the side: the onion potatoes. If you haven’t had them before, I urge you to make them today! Peel and cut potatoes and cook them for a while. When they soften, throw them into a pan with onions and fry together for a while.
This potato preparation method makes them soft, succulent and moist while the onion adds an unforgettable taste and aroma.
Today’s video recipe is a great example of a delicious, classic Balkan way of preparing a veal under shoulder roast, you can serve to anyone with pride.
