How To make Stuffed Mushrooms (Finsand)
20 lg White Mushrooms
1/3 c Onion, diced
2 tb Cornflake Crumbs
2 tb Bread Crumbs, fine
2 tb Parmesan Cheese, grated
3 tb Dry Sherry
Water Parsley Flakes Salt and Pepper Garlic Powder (optional) Wash and clean the mushrooms; then pull off the stems and dice. Place the diced stems and onions in a small bowl, and cover with wax paper. With the microwave on HIGH, cook for 45 seconds. Add the crumbs, cheese, sherry and enough water to moisten the mixture. Season to taste with parsley flakes, salt, pepper and garlic powder. Then spoon the filling into the mushroom caps. Place them around the edge of a large round microwave plate. Cook on MEDIUM for 3 minutes, turning the plate every minute for even cooking. Serve hot. Making delicious Fish Biryani - with Baby hake and boiled eggs
Fish biryani can be a more complicated recipe to follow but the reward at the end is delicious enough to make it worth the trouble.
Requires some preparation as well as simultaneous steps. Follow along as I use baby hake that we got, but the process for any other fresh fish will be the same.
Ingredients
800g frozen baby hake
To marinate the fish
2 tbs oil
1 tsp mixed masala
1 tsp soy sauce
1 tsp fine salt to taste
Crack of black pepper
Sprinkle of mixed herbs
Splash of lemon juice
For Biryani curry
3 medium tomatoes grated
1 medium onion, grated
3 green chillies
Biryani mix - cinnamon sticks, bay leaves, star anise and fennel
4 cloves of garlic sliced
1 tbs mixed masala
1 tsp hurdee (tumeric)
1 tsp salt
1 cup biryani dal (brown lentils)
1/2 cup frozen peas
The left over marinade from the fish
1/2 cup of the oil used to fry the fish
1/2 onion for garnish - fried in 1/2 cup oil
4 eggs, boiled
Dhania to garnish
2 cups par cooked rice (follow steps in chicken biryani recipe)
Best served with dhal and salad or sour milk salad. Will serve up to 6-8 people but can also be kept in the fridge because it will definitely taste better the next day!

Ingredients
Salmon ( size will depend on how many people you are cooking for)
Dill ( fresh herb or dried)
Butter ( just a thin layer over the salmon)
Rough Puff pastry ( recipe below)
Hollandaise sauce
3 Egg yolks
115g Butter ( about 1/2 cup)
1/2 Lemon juice
Salt & pepper
1/2 tspCayenne pepper
1 tsp Mustard
