1 Straight cucumber 125 g (4oz) Cream cheese, softened 1/2 t Dry onion flakes, crushed 1/2 t Dried dill weed Paprika Score cucumber all around by scraping from top to bottom with fork tines. Cut ends off and scoop out seeds from center. A small spoon and a vegetable corer work well. Be sure to remove all seeds because that is the part where most of the moisture is. Mash cheese with a fork. Add onion and dill. Mash together. Stuff cucumber. Wrap and chill. To serve, slice and sprinkle with paprika. May be served as is or on a cracker. ~---

I find myself making it when I know I have a large crowd to feed, it can easily be halved though so you don’t have too many left overs. INGREDIENTS
4 large cucumbers 1 pt. cherry tomatoes, quartered 1/2 c. kalamata olives, chopped 1/2 c. crumbled feta 2 tbsp. chopped dill, plus more for garnish Juice of 1 lemon 1 clove garlic, finely minced 1 tbsp. extra-virgin olive oil 1 tsp. oregano kosher salt Freshly ground black pepper
DIRECTIONS 1. Cut cucumbers into 3” pieces. Using a melon baller or spoon, create a well in each cucumber.
2. In a large bowl, combine tomatoes, olives, feta, dill, lemon juice, garlic, olive oil and oregano and stir until combined. Season with salt and pepper.
3. Spoon salad mixture into cucumbers. Garnish with more dill if desired and serve.
