1 ea Beef heart 1 c Cracker crumbs 1/2 c *white sauce 1 x Salt & pepper 1 c Chestnuts, roasted Soak the heart in cold water about 1 hour. Wash thoroughly and remove the muscles and arteries. Make a filling of the above ingredients and fill the heart. Fasten securely. Cover with boiling water and boil for 10 minutes. Reduce heat and simmer until tender. Remove heart from water a half hour before serving and sprinkle with cracker crumbs, salt and pepper. Bake at 350-F until brown. Stuffed Lamb Hearts
Lamb and goat hearts are a perfect size for stuffing. Here I fill them with Italian sausage and braise them with wine and tomatoes. It's a great way to serve hearts if you prefer them well-done and tender, as well as being a great introduction to cooking with organ meats. Full recipe link in comments.

Sliced Beef Heart
Beef heart is high in CoQ10, the anti-aging vitamin! CoQ10 is associated with cardiovascular health and reducing inflammation. It also is very mild tasting, inexpensive, and easy to prepare!
1 beef heart (approx 3-4 lbs) or 8 ounces as called for in this meal plan this week.
1 teaspoon sea salt
2 cups filtered water
Instant Pot
directions: If not cut in half, cut beef heart in half and remove any hard bits (it may already be trimmed and there is nothing to do). Place in the Instant Pot and sprinkle with sea salt. Pour water around the salted beef heart.
Place the lid on the Instant Pot, and set to ‘seal’. Cook on high pressure for 75 minutes on high pressure. Allow pressure to release naturally for at least 15 minutes.
Slow Cooker
directions: Follow the above directions as per the Instant Pot, but cook on low for 8-10 hours in the slow cooker instead of using the pressure setting.
To serve, either method: Slice thinly against the grain, salt as desired, and enjoy warm or cool.
