How To make Streuselkuchen(Crumb Cake)
TOPPING:
1/4 Cup Sugar
1/4 Cup Brown Sugar
2 Teaspoons Cinnamon
1 Cup Flour; Unbleached, Unsifted
1/2 Cup Butter
CAKE:
2 1/4 Cups Flour; Unbleached, Unsifted
1/4 Cup Sugar
1/4 Teaspoon Salt
1 Package Yeast; Dry
3/4 Cup Milk
1/2 Cup Butter
1 Egg; Large
OPPING: For topping, mix sugars, cinnamon and flour. Cut in butter until mixture is crumbly. CAKE: To make cake, mix 1 cup flour, sugar, salt and yeast in a large bowl. Place milk and butter in a sauce pan and heat until very warm (120 to 130 degrees F). Gradually add to dry ingredients; beat 2 minutes. Beat in egg and 1 cup flour. Beat on high speed for 2 minutes. Stir in enough flour to make a soft but stiff batter. Spread batter into a well-greased 9-inch square cake pan. Sprinkle with topping. Let rise in a warm place until double in bulk, about 1 1/2 hours. Bake at 350 degrees F. about 45 minutes or until done. Makes 1 9-inch square cake.

INGREDIENTS
Oil & Flour for the pan
195g Plain Flour
100g Caster Sugar
25g Baking Powder
8g Salt
1 Egg
125ml Milk
10ml Vanilla Extract
40ml Oil with no flavour like rice or vegetable
195g Plain Flour
220g packed Light-Brown Sugar
15g Ground Cinnamon
250ml Unsalted Butter, melted and cooled
Confectioners'/ Icing sugar, for dusting
Bake in a moderate oven (180c/375f) for 20 to 25 mins, make sure that you rotate in your oven half way though the cooking process to make sure you get a even bake.
Dust with the icing sugar just before serving

Schwarzer Johannisbeer Streuselkuchen / Blackcurrant Crumble Cake
Ein Hefeteigkuchen vom Backblech mit Johannisbeeren, Quark und Streuseln. So wie man früher einfache Obstkuchen gebacken hat. Einen Teil davon habe ich eingefroren und an eine nette Nachbarin verschenkt :)
Wem das zu sauer ist: Den gebackenen Kuchen einfach dick mit Puderzucker besieben. Dazu gehört unbedingt leicht gesüsste Schlagsahne.
Zutaten für den Teig:
500 g Mehl
1 Pck. Trockenhefe
250 ml lauwarme Milch
80 g Butter
1 Ei
50 g Zucker
1/2 Tl. Salz
Für die Streusel:
130 g Mehl
100 g Butter
100 g Zucker
1 Tl. Vanillepaste
Zutaten für den Quarkbelag:
3 Eier
350 g Sahnequark
150 g Schmand
50 g Zucker
1 Tl. Speisestärke
1 Tl. Vanillepaste
Ausserdem noch:
1 kg Schwarze Johannisbeeren
evtl. Puderzucker zum besieben

1 TL Zucker
1/8 Liter Milch lauwarm [zusammen mischen und 5-10 Minuten Aktivieren lassen]
500g Mehl [sieben]
1/8 Liter Milch
70g Zucker
50g Butter
1 Prise Salz
Für die Streusel:
400g Mehl
250g Zucker
250g Butter
1 Prise Salz
1/2 TL Zimt
1/2 TL Vanille Pulver
1 Esslöffel Zitronensaft
Zum Bestreichen:
8 Esslöffel Milch
1 Esslöffel Butter [geschmolzen] (freiwillig)
Delicious Crumb Cake Recipe:
For the Dough:
42g Yeasts
1/8 Liters Milk [lukewarm]
1 Teaspoon Sugar
Add all the ingredients together and let it activate for 5-10 minutes.

1/8 Liters of fresh milk
70g Sugar

For the Crumble:
