How To make Strawberry Meringue Cake
GENOISE LAYER:
4 lg Eggs
1 pn Salt
2/3 c Sugar
1/2 c Cake flour
3 tb Cornstarch
LEMON KIRSCH SYRUP:
1/3 c Water
1/4 c Sugar
2 tb Lemon juice
2 tb Kirsch
StrAWBERRY FILLING:
2 pt Strawberries
1/2 c Sugar
1 tb Lemon juice
1 tb Kirsch
2 tb Cornstarch
COVERING MERINGUE:
6 lg Egg whites
1 c Sugar
1/4 c Toasted, sliced almonds
GENOISE LAYER: Preheat oven to 350F. Break eggs into bowl of electric mixer. Whisk in salt, then sugar. Place bowl over pan of simmering water. Whisk until just lukewarm. Whip by machine until cold and increased in volume, about 4-5 minutes. Mix cake flour and cornstarch. Sift over the egg foam in 3 or 4 additions, folding in with a rubber spatula. Pour batter into buttered and paper-lined 10-inch round pan and level. Bake about 30 minutes until well-risen, golden and beginning to shrink from sides. Unmold immediately and cool on a rack. Divide the cooled Genoise into 3 layers with a sharp, serrated knife. Place 1 layer on a cardboard or platter and moisten with 1/3 of the syrup, using a brush. Spread with 1/2 the filling. Repeat with the second layer. Place the last layer on and moisten with the remaining syrup. LEMON KIRSCH SYRUP: For the syrup, combine water and sugar in a small pan, bring to a boil and cool. Stir in lemon juice and kirsch. StrAWBERRY FILLING: For the filling, reserve 6 of the best strawberries as a decoration. Rinse, hull and slice the remaining berries. Place 1/4 of the berries in a saucepan with the sugar and bring to a boil. Combine lemon juice, kirsch and corn- starch and stir into the strawberry mixture off the heat. Return to a boil, stirring and cook 2 minutes. Remove from heat, cool and stir in remaining sliced berries. COVERING MERINGUE: Preheat oven to 400F and set rack in the middle level. Combine egg whites and sugar in bowl
of an electric mixer. Whisk over simmering water until egg whites are hot and sugar is dissolved. Beat on medium speed until cold and risen in volume, but not dry. Spread cake with meringue. Pipe decoration on top of cake, using a pastry bag fitted with a star tube. Press toasted, sliced almonds against the side of the cake. Place the cake on a cookie sheet and color the meringue in the oven for about 3-4 minutes. Remove the cake from the oven and cool. Decorate with the reserved strawberries.

Ingredients
Meringue
4 egg whites (room temperature)
1 cup (210 g) of caster sugar
1 tablespoon of cornstarch
1 teaspoon of white vinegar
Strawberry sauce
9 oz (250 g) of frozen strawberries
2 1/2 tablespoons (30 g) of granulated sugar
Strawberry mascarpone mousse
1 and 1/4 cup (300 ml) of whipping cream
4 tablespoons (30 g) of powdered sugar
1 tablespoon of vanilla sugar or 1 teaspoon of vanilla extract
8 oz (230 g) mascarpone cheese (If living in Europe, you can use 250 g packaging)
2/3 of Strawberry sauce
Topping
9 oz (259 g) of fresh strawberries
1/3 of Strawberry sauce
1 tablespoon of powdered sugar
Instructions
Set the oven to 210 °F (100 ° C).
Draw 3 circles, about 7 inches (18 cm) in diameter, on parchment paper. Place the parchment paper on a baking tray with the drawings upsidedown.
Meringue
Whisk the egg whites on medium speed with 1/4 of the sugar to a foam. Add another quarter of the sugar while whisking, then change the speed to medium-high. Once the egg white clump around the whisk, add the remaining sugar and then mix in the cornstarch and vinegar while whisking. Set the speed to high speed for 2 minutes. Spread the meringue inside the circles. Place in the preheated oven for about 90 minutes. Turn off the heat and leave the meringues inside with the door slightly open (use a wooden spoon) until the oven has cooled down.
Strawberry sauce
Boil the strawberries and sugar for about 2 minutes. Mix until smooth and strain through a fine-mesh strainer. Let cool.
Strawberry Mousse
Whip the cream fluffy and add the mascarpone, the powdered sugar, and the vanilla (sugar or extract)
Beat the mix until smooth, then quickly mix in 2/3 of the strawberry sauce with a spatula.
Place a meringue base on a plate and add 1/3 of the mousse, repeat with the second meringue and the mousse. Finish with the last layer with mousse and top with fresh (washed) strawberries sliced into 4 quarters. Drizzle over the rest of the strawberry sauce and dust with icing sugar. Enjoy!

자르면 딸기가 예쁘게 들어 있는 스위스 머랭 버터크림 케이크를 만들었어요~
겉모양은 심플하지만 시트 안에 딸기를 통으로 넣어 독특한 모양의 케이크가 된 것 같아요.
시트가 4장이 필요해서 케이크 반죽 양을 조금 늘려 만들었는데 레시피는 밑에 적어 두었으니 참고해 만드시면 될 것 같아요.
작은 사이즈의 딸기를 사용했더니 가운데 4개가 일렬로 들어가더라구요.
예쁘게 만들려면 딸기의 높이를 비슷하게 잘라 넣어야 좋은 것 같아요.
케이크 모양을 잘 유지하려면 생크림보다 단단한 크림을 사용해야 좋아 버터크림을 사용했어요.
이번에 만든 스위스 머랭 버터크림은 휘핑만 충분히 한다면 전혀 느끼하지 않고 부드러워서 정말 맛있답니다~

▶재료
- 케이크 시트 :
(틀 사이즈 15cm / 1.5cm 두께 4장)
차가운 달걀 170g
설탕 100g
바닐라익스트랙 3g
차가운 무염버터 28g
차가운 우유 28g
박력분 94g
달걀흰자 140g
설탕 200g
소금 1g
무염버터 370g
바닐라익스트랙 5g
설탕시럽
딸기
코팅용 화이트 초콜릿 60g
생크림 50g
식용색소 (빨강, 흰색)
▶레시피
1. 달걀 흰자에 설탕과 소금을 넣고 섞은 뒤 끓는 물이 든 냄비 위에 올려 65~70도 정도까지 중탕으로 온도를 올린다.
2. 볼을 내려 휘핑기로 머랭을 만드는데 머랭이 뜨거운 상태이기 때문에 마무리 단계에서 얼음이 든 볼 위에 올려 휘핑한다.
3. 머랭의 온도가 25도 정도가 되면 실온 상태의 말랑한 버터를 조금씩 넣으며 충분히 휘핑해 부드러운 크림을 만든다.
4. 바닐라익스트랙을 넣고 저속에서 휘핑해 크림을 완성한다.(충분히 휘핑해야 부드러운 크림이 만들어져요-10분 정도)
5. 케이크 시트의 중간 부분 2장은 12cm 링으로 가운데를 잘라내 준비한다.
6. 돌림판에 케이크 시트를 한 장 올리고 설탕 시럽을 뿌린 뒤 크림을 평평하게 바르고 잘라낸 케이크 시트 한 장을 올리고 테두리에 크림을 짠다.
7. 잘라낸 케이크 시트를 한 장 더 올리고 안쪽에 크림을 짠 뒤 딸기를 통으로 눌러가며 넣는다.
8. 딸기 사이사이에 크림을 채우고 윗면에 크림을 올려 평평하게 한 뒤 케이크 시트를 올리고 설탕 시럽을 뿌린 뒤 크림을 전체적으로 얇게 발라 냉장실에서 1시간 정도 굳힌다.
9. 남은 크림을 모두 올리고 깔끔하게 아이싱 한 뒤 냉장실에서 2시간 정도 굳힌다.
10. 코팅용 화이트 초콜릿에 생크림을 넣고 전자레인지에서 25초 정도 가열한 뒤 잘 섞고 빨강과 흰색 색소를 넣고 원하는 색을 만든다.
11. 24도로 식으면 케이크 위에 붓고 스페츄라로 자연스럽게 흐르게 한 뒤 딸기를 올려 장식한다.

A soft, light and airy meringue filled with a creamy mascarpone
and fresh berries, a perfect balance between sweet and tart.
Ingredients:
For merengue:
5 egg whites- 160 g
250 g fine granulates sugar
20 g corn starch (2 tablespoons)
1 teaspoon of lemon juice
vanilla
For filling:
250 ml of heavy whipping cream
120 g of condensed milk
250g of mascarpone
fresh berries( strawberries, blueberries of your choice)
leaves of mint
Recipe:
Separate the whites of the yolks.
Pour the egg whites into the mixer bowl.
Start whipping, first on a medium speed until foamy consistency.
Gradually add fine sugar.
Beat for 5 minutes at high speed.
Crank up the speed and whip until stiff peaks.
The meringue should have a glossy appearance and hang off the whipping blade like a bird's beak.
Add lemon juice and vanilla.
Sift corn starch and mix on medium speed carefully in then 10 seconds on maximum speed until stiff peaks.
In a baking sheet spread evenly the merengue.
Bake in oven at 160 ° C or 320°F for 30-45 minutes depended of your oven.
The top of merengue should be crispy and slightly browned,
and the inside should be still soft.
The top crack with a crunch.
Turn over and leave it cool for 5 minutes
Turn over the meringue onto a kitchen towel, peel off the parchment paper
and leave cool down completely for about 15 minutes.
Make filling:
In a bowl add heavy cream and start whipping on a medium speed until
meddium-stiff peaks.
Then add maximum speed and whip until medium-stiff peaks.
Add mascarpone cheese and whisk on medium speed.
Add condensed milk in a thin stream.
Whip on medium speed just until stiff peaks.
gently spread the whipped cream on top of the meringue.
Put fresh strawberries on top of the cream.
Gently roll the meringue into a log,
helping with the kitchen towel the meringue.
Cut off the ends of the roll.
Leave 20 hours in the refrigerator.
The whipping cream will become denser.
I didn't wait because it's incredible tasty.
Decorate as you wish!
You can use leftover whipped cream, chopped fresh strawberries, blueberries, leaves of mint.
