How To make Spooktacular Choc Cupcakes w/ Creamy Peanut B
FILLING:
3 oz (2 pkg) cream cheese;
-softened 2/3 c Creamy peanut Butter;
1/4 c Vanilla Extact;
3 c Powdered sugar;
CUPCAKES:
2 c All-Purpose flour;
2 c Sugar;
3/4 c Cocoa;
1 ts Baking soda;
1 ts Salt;
1/2 ts Baking powder;
3/4 c Shortening;
3/4 c Buttermilk;
-=OR=- 3/4 c Sour milk
3/4 c Water;
2 Eggs;
1 ts Vanilla extract;
Assorted candies; (optional) Heat oven to 350 degrees. Line Muffins cups (2 1/2" in diameter) with paper bake cups. TO MAKING FILLING: Beat cream cheese and peanut butter in large bowl until blended. Add milk and vanilla; beat well. Gradually add powdered sugar, beating until smooth. Add additional milk, 1 ts at time, until desired consistency is reached. TO MAKE CUPCAKES: Stir together dry ingredients in a large bowl. Add shortening, buttermilk, water, eggs and vanilla. Beat a low speed with an electric mixer 30 seconds, scraping bowl occasionally. Fill muffin cups 1/2 full with batter. Bake in a 350 degree oven for 20 minutes. Remove from wire rack. Cook completely. Place peanut butter cream filling into a pastry bag fitted with large star tip. Insert the tip into the center of the on the top of the cupcakes; pipe filling into cake. Remove tip from cake; garnish top with swirl or filling. Decorate with candies, if desired. Cover; refrigerate liftover cupcakes. NOTE: To sour milk, use 2 1/2 teaspoon white vinegar plus enough milk to make 3/4 cup. Source: The San Diego Union-Tribune Food Section, Oct. 13,

Recipe -
120g smooth peanut butter
110g unsalted butter, soft
100g light soft brown sugar
100g caster sugar
1 lg free range egg
1/2 tsp vanilla extract
150g plain flour
1/2 tsp bicarbonate of soda
75g chocolate chips
a couple of handfuls each of chocolate chips, mini marshmallows and roasted peanuts
Extra melted chocolate for drizzling!

For the Brownie...
165g 70% dark chocolate
165g unsalted butter
330g caster sugar
3 large eggs
45g cocoa powder
120g plain flour
1/2 tsp baking powder
1/2 tsp salt
For the PBCD...
85g unsalted butter, soft
150g light brown soft sugar
15g demerara sugar
3 tbsp yoghurt
210g smooth peanut butter
150g plain flour
3/4 tsp salt
50g milk chocolate chips
For the Ganache...
150g 70%dark chocolate
150 double cream
Reese's Peanut Butter Cups and roasted and salted peanuts to decorate.

Peanut Butter Cups made with Decadent Cacao Bliss
Ingredients:
1 cup organic unrefined coconut oil
1/2 -1 cup Cacao Bliss or raw cacao
(Get Superfood Cacao Bliss:
2 teaspoons vanilla extract
1/4 cup pure maple syrup (optional)
1/4 cup unsweetened peanut butter
Directions:
1. Mix the first 3 or 4 ingredients in a saucepan over low heat.
2. Pour 1 tablespoon of chocolate mixture in the bottom of each muffin tin or cupcake liner.
3. Freeze 10-20 minutes
4.Top each with 1 teaspoon peanut butter or almond butter.
5. Pour the remaining chocolate sauce over the top of each peanut butter cup and freeze until ready to eat.
