How To make Spit Roasted Chili Barbeque Ribs
4 T Butter
1 ea Onion finely chopped
2 ea Cloves garlic, fine chopped
4 c Canned plum tomatoes
2 t Chili powder
1 c Dry red wine
1/2 c Soya sauce
2 T Cornstarch
1 T Granulated sugar
1 ea Salt
1/2 c Chicken stock
5 lb Trimmed spareribs
Melt butter in saucepan or skillet over medium high heat and cook onion until soft. Add garlic and cook a minute longer. Put tomatoes through a food mill or puree in a blender or food processor. Add to onion mixture along with all other ingredients except meat. Bring to a boil and simmer for several minutes. Remove from heat and set aside. Thread ribs on to spit and secure with prongs. Close cover two thirds of way. Spit roast for 30 minutes, then baste every ten or so for another 40 minutes or until juices run clear. Place several tablespoons of sauce on each plate and serve with ribs. Makes about 4 servings

Spices:
Rock Salt to taste
Ground Pepper 1.5 Tbsp
Homemade rub to taste
Cayenne Pepper 1 tsp
Paprika 1 tsp
Mint 1 tsp
Cumin powder 1 tsp
Homemade rub
3 Tbsp Bbq spice
1 Tbsp Chilli flakes
1 Tbsp mixed herbs
1 Tsp ground pepper

RIBS & SAUCE - Smoked baby back ribs & home made barbecue sauce.

Recipe :
Ingredients
- a couple of racks Baby Back ribs
- a dry rub of your choise
Sauce ingredients
- 5 cloves of garlic
- 2 onions chopped
- 1 bell pepper chopped
- 1200 gr. chopped can tomatoes
- 125 ml apple cider vinegar
- 150 gr agave syrup
- 3 tablespoons worchestershire sauce
- 2 tablespoons brown sugar
- 1 tblespoon salt (or to taste)
- Ground black pepper to taste
How to:
- Take the membrane of the ribs
- rub the ribs with olive oil
- Sprinkle on your favorite dry rub
- Place the ribs on your barbecue or smoker for 5 hours at 110 degrees Celsius or 225 degrees Fahrenheit. Meanwhile...
- Saute the onion garlic and bell pepper for the sauce
- add the rest of the sauce ingredients
- Boil the sauce for 1 hour at least
- Serve the sauce hot on the side as a dipping sauce.

Ingredients:
Iberico pork belly ribs
Rib rub ingredients:
Paprika powder - 1/2 cup
Chili powder - 1/4 cup
Garlic powder - 2 tablespoons
Salt - 3 tablespoons
koriander powder - 2 tablespoons
Curry powder - 2 tablespoons
Mustard powder - 2 tablespoons
Black Pepper - 1 tablespoon
Cane sugar - 2 tablespoons
Barbecue sauce ingredients:
Apple juice - 100 ml
Apple cider vinegar - 100ml
Soy sauce - 2 tablespoon
Worcester sauce - 1 tablespoon
Brown sugar - 4 tablespoons
BBQ rub - 3 tablespoons
tabasco sauce - to taste (1/2 teaspoon)
ketchup - 500 ml
How To:
05h00m - start up your barbecue set it to smoke at 125C or 225F
04h40m - Mix the ingredients for rub. Remove the membrane from the belly ribs and apply The rub
04h30m - Smoke the ribs. If you are using ribs that have less fat and are thin. Wrap them in tin foil after 2 hours.
00h20m - Mix the ingredients for the barbecue sauce
00h15m - Brush the ribs with the barbecue sauce and cook them for 15 minutes more
00h00m - Enjoy!!
