The colour is a beautiful healthy green, and you know there’s nothing artificial, as you made it yourself. A lot of people are surprised how simple it is to make.
You can cook fresh pasta in 2-3 minutes when fresh. Once you try fresh spinach pasta, there’s simply no turning back, fresh pasta simply rocks! You will need a pasta machine to get perfect pasta, otherwise you can still use a rolling pin and a knife, it will be thicker and more rustic but still taste incredible. This spaghetti with spinach sauce recipe is a super simple pasta sauce that’s quick, healthy, and really flavorful. If you are after some hearty comfort food which gets ready within minutes then this vegetarian pasta is just what you need!!
It’s also a super versatile dish.. Don’t be afraid to tickle the recipe according to your liking!! You can use mushrooms, meat, shrimp, salmon.. just to name a few!!

Ingredients:
▪ Spinach 250 gm
▪ Spaghetti 250 gm
▪ Garlic 3 - 4 big cloves sliced
▪ Olive oil 2 - 3 tbsp
▪ salt
▪ pepper
▪ grated cheese 1/2 cup ( Fresh Parmesan is the best option )
Procedure:
▪ Bring a large pot water to boiling and seasoned generously with salt.
▪ Cook the Pasta according to package instruction.
▪ Reserve a cup of pasta water before draining. Drain and keep it aside.
▪ Heat Olive oil in a large pan on medium-high heat.
▪ Add sliced Garlic and give a quick stir. Do not brown it.
▪ Add the spinach and sauté with Garlic until wilted.
▪ Season with salt and pepper. Remove from heat and set aside.
▪ Once it cools down add the spinach garlic mixture to a blender. Add cheese and half of the reserved pasta water. Puree it until it forms a sauce.
▪ Heat 1 tsp of olive oil in the pan and add the sauce back into the pan.
▪ Cook for a minute and then add the precooked spaghetti.
▪ Stir to combine properly adding more pasta water if needed.
▪ Seasoned with more salt and pepper if required. Combine well to heat through.
▪ Once cooked remove from the heat and save hot with some extra grated cheese.

We were surprised how rich and delicious this vegetarian spinach ricotta cannelloni is! It is a great pasta dish and we are happy that our Italian friends suggested that we make it.

- cannelloni pasta [14-18 tubes / 7 oz / 200 g]
- spinach [1 pound / 450 g]
- olive oil [2 tbsp / 30 ml]
- garlic [2 cloves]
- ground nutmeg [1/4 tsp]
- salt & pepper
- onion [1 medium-sized]
- canned plum tomatoes [14 oz / 400 g]
- canned cherry tomatoes [14 oz / 400 g]
- basil leaves [a handful]
- lemon juice [1 tbsp / 15 ml]
- a bay leaf [optional]
- one large egg
- oregano [1 tsp]
- ricotta cheese [1.1 lbs / 500 g]
- Parmigiano Reggiano [4.2 oz / 120 g]
- mozzarella [4.4 oz / 125 g]
- young gouda cheese [4.4 oz / 125 g]

How to Make One-Pot Pasta with Spinach and Tomatoes | Cooking Light
Master a classic with this easy-as-pie one-pot pasta. You’ll love how simple the cleanup is, but love even more how satisfying each bite of this delicious dish is.
Ingredients:
1 tablespoon olive oil
1 cup chopped onion
6 garlic cloves, finely chopped
1 (14.5-ounce) can unsalted petite diced tomatoes, undrained
1 1/2 cups unsalted chicken stock (such as Swanson)
1/2 teaspoon dried oregano
8 ounces whole-grain spaghetti or linguine (such as Barilla)
1/2 teaspoon salt
10 ounce fresh spinach
1 ounce Parmesan cheese, grated (about 1/4 cup)
Preparation
1. Heat a Dutch oven or large saucepan over medium-high heat. Add oil; swirl to coat.
2. Add onion and garlic to pan; sauté 3 minutes or until onion starts to brown.
3. Add tomatoes, stock, oregano, and pasta, in that order. Bring to a boil.
4. Stir to submerge noodles in liquid.
5. Cover, reduce heat to medium-low, and cook 7 minutes or until pasta is almost done.
6. Uncover; stir in salt.
7. Add spinach in batches, stirring until spinach wilts. Remove from heat; let stand 5 minutes.
8. Sprinkle with cheese.
Riff: Use fresh grape tomatoes instead, and add fresh herbs.
Riff: Swap out spaghetti for any short pasta shape, such as elbow macaroni, rotini, or shells.
Riff: Try adding chopped skinless, boneless chicken thighs, ground beef, or ground turkey for a heartier dish.
