How To make Spicy Vegetable Soup with Black Beans
1 md Onion, chopped
4 lg Garlic cloves, minced
1/2 c Red wine, stock, or water
28 oz Can crushed tomatoes
4 c Water or stock
1 Green bell pepper, diced
2 Stalks celery, diced
2 c Sliced okra
2 ts Finely minced fresh ginger
(don't omit ginger) 1 ts Each dried oregano, dried
Thyme, paprika, and ground Cumin 1/4 ts Each black pepper and
Cayenne pepper 1 c Diced zucchini
15 oz Can black beans, with liquid
1 To 2 tablespoons soy sauce
4 c Cooked brown rice
Braise the onion and garlic in wine until onion is soft. Add tomatoes, water, green pepper, celery, okra, ginger, and seasonings; simmer for 15 minutes. Add the diced zucchini and the black beans with their liquid, cover and cook until the zucchini is just tender, about 10 minutes. Add soy sauce to taste. Serve over cooked brown rice. This Easy Minestrone Soup is a healthy one-pot meal that's loaded with veggies, beans, and pasta. It's vegetarian, dairy-free, and can easily be made vegan or gluten-free. Make-ahead and freezer friendly!
Ingredients
1 tablespoon canola oil
1 small onion (finely diced)
2 ribs celery (sliced)
3 large carrots (peeled and finely chopped)
1 tablespoon tomato paste
1 tablespoon minced garlic (2 large cloves)
1½ teaspoons salt
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried basil
¼ teaspoon black pepper
⅛ teaspoon crushed red pepper flakes
2 cups fresh spinach (roughly chopped)
4 cups low sodium chicken broth (or vegetable broth)
28 oz canned diced tomatoes (798 ml) no salt added
1 cup canned red kidney beans* (rinsed) 8 oz
1 cup canned white kidney beans* (rinsed) 8 oz
1 cups small uncooked pasta (I used medium shells)
Parmesan for serving
Instructions
In a large pot cook and stir the oil, carrots, celery and onion over medium-high heat until the onion has softened, about 3-4 minutes.
Add the salt, garlic, parsley, oregano, basil, and pepper and cook 1 minute.
Add the broth, tomatoes, and beans. Cover and simmer over medium heat for about 10 minutes or until carrots are crisp-tender.
Stir in pasta, cover and simmer for 10 minutes or until pasta reaches desired tenderness, stirring often.
Stir in spinach and serve with shredded Parmesan cheese as desired.

Get GIVE IT INFERNO -
Spicy Black Bean and Vegetable Soup:
1 c. Onion
1/2 c. Carrots
1/2 c. Green Pepper (Red Pepper Optional), I used 2 TBLS Dried
1 c. Sweet Corn
1 Potato medium sized chopped
1 can Black beans drained and rinsed
2 TBLS Tomato Paste
1 Can Diced Tomatoes + 2 Cans Water (Add a bit more if needed)
1/4 c. White Rice
1/2 c. Chopped fresh Cilantro
1 - 2 Tsp Give It Inferno - Seasoning
2 Tsp Cumin
Fresh ground pepper
salt to taste
Saute the vegetables until onions are translucent. Add Everything else. Simmer for 25- 30 min covered. Check seasoning. Add a bit more water if needed.
Serve topped with Cilantro and chopped green onions.
Easy low cost meal, that is great for leftovers, or bring to lunch. Low cost, food on a budget.
