The BEST Mexican Shrimp Soup | Caldo de Camaron - 4k Cooking Video
This easy-to-prepare Caldo de Camaron, or Shrimp stew, can be prepared during Lenten or added to your menu and prepare it all year round. The secret ingredients used to prepare the sauce give it the right flavor!
Ingredients:
1 Lb Cleaned Medium or Large Raw Shrimp
4-5 Roma Tomatoes
2-3 Chile Guajillo
2 Serrano Peppers for heat (Optional)
4 Large Garlic Cloves
1/2 White Onion
1 Cup Dry Shrimp (Approximately 1 oz)
8 cups of Vegetable Broth
2 Large Carrots
2 Large Potatoes
1 Calabacita or Zucchini
1 Chayote Squash
1 Tsp Balck Pepper
1 Tsp or More of Chili Powder
Salt to Taste
Epazote or Cilantro
Adobo Seasoning of your choice
*You can also add or take away any other vegetable.
Instructions:
1. Wash all the vegetables, remove the stem and the seeds from the chile guajillo, and cut them into 1/2 inch pieces. If adding chiles de arbol, remove the stems. Chop the tomatoes into fourths and roughly chop the onion.
2. Chop two carrots, potatoes, two ears of corn, One Chayote Squash, and one zucchini.
3. Heat 1/3 Cup of Olive Oil or your preferred cooking oil. Saute the vegetables and One cup of dry shrimp for 7-8 minutes.
4. Blend the ingredients from the pot with 2 cups of vegetable broth, then transfer it back into the same stockpot—season with black peppers, salt, and adobo seasoning. Bring to a simmer, then add the carrots, potatoes, Chayote squash, and corn. Boil over medium heat for 7-8 minutes.
5. Add in the shrimp, zucchini, and epazote or cilantro. Boil for an additional 7-8 minutes.
6. Serve with a side of corn tortillas, lime juice, and hot sauce.

Spicy Shrimp Soup
Spicy Shrimp Soup is brothy, warming, and packed with fresh flavor. Inspired by a dish from a local Ecuadorian restaurant, my take on Camarones al Ajillo, or spicy shrimp in garlic sauce, will become your new favorite soup recipe! PRINTABLE RECIPE HERE ????????
INGREDIENTS:
4 Tablespoons butter
1 large shallot, microplaned or minced
5 cloves garlic, microplaned, pressed or finely minced
1 Tablespoon gluten free flour (or all-purpose flour if you don't need to eat GF)
3 cups chicken stock
2 cups seafood stock (I like Imagine brand)
1 cup tomato sauce
2 jalapeños, divided (1 jalapeño sliced from the ribs/seeds, 1 sliced into rings)
3 small bay leaves
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon white pepper
3/4lb jumbo shrimp, peeled and deveined
2 limes (1 cut in half, 1 cut into wedges)
chopped fresh cilantro
cooked white rice, for serving
DIRECTIONS:
1. Melt butter in a 5 or 6 quart Dutch oven or soup pot over medium-low heat. Add shallots and garlic then saute until light brown and tender, 5 minutes, ensuring butter is just barely sizzling as to not over-brown or burn the garlic. Sprinkle in flour then stir to combine and saute for 1 more minute.
2. Add tomato sauce then stir to combine, ensuring there’s no lumps in the flour/butter mixture. Add seafood stock, chicken stock, the jalapeño that’s been sliced from the ribs and seeds, bay leaves, and spices. Turn heat up to bring soup to a boil then turn down to medium, place a lid partially on top and gently simmer for 30 minutes. Remove bay leaves and jalapeños then add lime juice to taste, and salt if needed. I usually use about 1/3 of a fresh lime.
3. Turn heat back up to high to bring the soup to a boil then add shrimp and boil until cooked through, 1-2 minutes. Scoop soup into bowls then top with cooked rice. Add sliced raw jalapeños (these add a ton of flavor and heat vs just being a garnish so don’t skip!) and chopped cilantro then serve with lime wedges.
NOTES
- For a spicier soup, leave the ribs and seeds on the jalapeno that simmers in the soup, or use two jalapenos.

Korean Spicy Seafood Soup Ingredients:
5x10 Dried seaweed, AKA Konbu or Dashima, soaked in 7 cups of water for 20 min
2 Tbs. Sesame oil
2 Tbs. Gochugaru, AKA Korean red pepper flakes
Thumb size ginger, cut into halves smashed
4 Cloves garlic, smashed
2 Green onion, whole
1/4 tsp. salt
1/8 tsp. pepper
2 dried shiitake mushrooms
1 Fresno, AKA red jalapeño, cut into halves
1/2 of Medium yellow onion, cut into halves
3 Tbs. Fish sauce(3 crabs brand)
10 Clams, soak in salted water for at least 1 hour to get rid of its sand
10 Mussels, cleaned
1/4 cup Calamari, cleaned, cut into 3/4 rings
4 Large shrimps (16/20), peeled and deveined
8 oz. Fresh/dry udon noodles or fresh ramen noodles, cooked by following the directions of the package you are using

Enoki mushrooms for garnish, optional
Brown beech mushrooms for garnish, optional

I’m not really sure what to call this but it’s definitely in the realm of Hmong/Lao/Thai food because of the ingredients used. I wasn’t able to find galangal and lime leaves, but if you are then definitely use it to flavor the broth.
