How To make Spicy Rice Pilaf with Turkey
1 c Brown rice
1/2 ts Cumin seeds
1/4 ts Ground ginger
1/4 ts Ground cinnamon
4 Cardamom seeds
4 Whole cloves
1 tb Vegetable oil
2 c Turkey stock or water
1/4 c Dark or golden raisins
2 c Chopped cooked turkey
1/4 c Pine nuts or chopped cashews
Toast cashews if using. Saute the rice, cumin seeds, ginger, cinnamon, cardamom seeds and cloves in the oil in a saucepan until the rice is browned. Add the stock or water and bring the mixture to a boil. Lower the heat and simmer for 45 to 50 minutes or until the rice is cooked. Add the raisins, turkey, and nuts to the rice mixture. Today I'm making my favorite bulgur pilaf, which is very rich in flavors, with fragrant spices and is simply delicious. Turkish bulgur pilaf is an extremely filling, satisfying and quite healthy dish that is easy to make and a really nice alternative to rice.
Bulgur is very rich in nutritions and one of the many benefits of consuming bulgur Pilaf is the rich amount of fiber that the whole wheat contains.

Ingredients:
• 2 cups of bulgur (coarse bulgur for pilaf)
• 3 tbsp vegetable oil
• 2 tbsp butter
• 1 onion
• 1 clove of garlic
• 3 green chilies
• 1 sweet red pepper
• 1 cup tomato sauce or grated tomatoes
• 1 tbsp tomato paste
• 1 tbsp chili paste
• 2 tsp salt
• 2 tsp dried mint
• 1 tsp black pepper
• 1 tsp chili flakes
• 4 cups of hot water (about 800 ml)
Instructions:
1. Finely chop the onion, garlic, green chilies and the red pepper
2. In a large pan with a lid, heat up the oil, add the onions and cook for 1-2 minutes until fragrant
3. Add 1 tbsp of butter and continue cooking until the butter is slightly browned
4. Add the chopped garlic, green chilies and the red peppers and stir and cook until soft
5. Add the tomato paste and the chili paste and cook 1-2 minutes until fragrant
6. Add the tomato sauce or the grated tomatoes
7. Add the salt, dried mint, black pepper and the paprika powder; stir and cook for 1-2 minutes
8. Add 2 cups of bulgur and cook & stir for another 3-4 minutes
9. Add the hot water and stir until the ingredients are mixed
10. Add the remaining 1 tbsp butter and stir until the butter is melted
11. Cover the lid and bring to a boil, once it’s boiling bring to low heat and let it simmer
12. Cook for about 10-15 minutes until the bulgur is soft and no water remains
13. Gently stir to mix and combine all the ingredients
14. Place a paper towel or kitchen towel on top of the bulgur and cover the lid on top
15. Let the bulgur rest for 10 minutes before serving

2 cups Baldo, Osmancık, Calrose, or similar long-grain rice that doesn't contain too much starch
1 tsp salt, 2 cups hot water to soak
4 tbsp orzo pasta
1 heaped tbsp butter
4 tbsp olive oil
salt to taste
3+1/4 cups hot water (or you can use some chicken stock)

Turkish Rice Pilaf Recipe (Hints To Make A Fluffy And Full Of Flavored Pilaf)
Turkish rice pilaf (pilav) is most traditional and well known side dish in Turkish Cuisine. There many rich varieties including orzo pilaf but this plain pilaf made with butter and olive oil has its own flavor and accompany with many dishes like doner kebab, chickpeas or white beans with meat dishes.
Ingredients for Rice Pilaf : (6 serving size)
2 cups long grain rice (In Turkey we usually use baldo or osmancık rice, calrose may also be used)
1 tsp salt to soak in the water
about 3 cups hot but not boiling water (for soaking)
For the cooking:
2 tbsp butter
3 tbsp olive oil
3 cups boiling water
1 to 1+1/2 tsp salt (depend on your taste and health:)
dash of sugar
5-6 drops of lemon juice
Note:To cook the pilaf try to use wider and shallow pan if possible
