Mexican Bean Burgers
Try a vegetarian alternative to burgers - use beans or lentils - high in fibre, low in fat and good source of protein.
Ingredients:
1 x 400g can kidney beans
1 slice of bread
chilli powder – see below
Small bunch coriander
1 tbsp. fresh salsa
1 tsp. lime juice
Seasoning (salt & pepper)
Method:
Heat grill to high (Remember grill safety).
Drain the beans then tip into a large bowl, then roughly crush with a potato masher.
Grate the bread to make breadcrumbs and add to beans.
Add chilli powder, chop and add the coriander leaves.
Add 1 tbsp. salsa and 1 tsp. lime juice
Season your mixture – good pinch of salt and pepper and mix all together
Divide the mixture into 4 and shape into burgers. Place on a baking tray, then grill for 4-5 mins on each side until golden and crisp.

Easy Mexican Bean Burgers Recipe
Ingredients:
1 carrot, sliced
1 (15 ounce) can kidney beans
1/2 cup chopped green bell pepper
1/2 cup chopped onion
2 cups salsa
1 cup dried bread crumbs
1/2 cup whole wheat flour
1/2 teaspoon ground black pepper
salt to taste
1 pinch chili powde
Directions:
Place carrot into a bowl, and fill with about 1/4 inch of water. Cover with plastic wrap, and cook in the microwave for 2 minutes, or until soft. Drain.
Mash beans and steamed carrot in a large bowl. Mix in green pepper, onion, salsa, bread crumbs, and whole wheat flour. Season with salt, black pepper, and chili powder. Add flour to create a firmer mixture, or more salsa if the mixture is too stiff. Form mixture into 8 patties, and place on a greased baking sheet.
Heat a large skillet over medium-high heat, and coat with cooking spray. Fry the patties for about 8 minutes on each side, or until browned and firm.

• 1/2 large red onion chopped
• 1-2 whole chipotle peppers in adobo sauce optional
• 4 cloves garlic
• 2 (15 ounce) cans black beans drained and rinsed
• 1 cup plain bread crumbs
• 1½ teaspoons cumin
• 3/4 teaspoon salt
• 1/2 teaspoon black pepper
• 2 large eggs

1️⃣ 00:00:13 - Place onion, chipotle, and garlic into a food processor and pulse until finely chopped. Add in black beans and pulse until the black beans are partially chopped, leaving some whole or partial beans. Transfer to a large mixing bowl.
2️⃣ 00:00:59 - Stir in the bread crumbs, cumin, salt, pepper and eggs until well combined.
