How To make Spicy Lentils with Peppers& Tomatoes
JUDI M. PHELPS:
3/4 lb Brown or green lentils
-washed and picked over -(approximately 2 cups) 6 c water
1 Bay leaf
Salt 1 tb Olive oil
1 lg Onion :
chopped
2 cl Garlic -- minced or put
-through a garlic press 1 Green pepper -- seeded and
-chopped 2 Hot chili peppers -- seeded
-and finely chopped 1 1/2 lb Fresh tomatoes -- seeded and
-finely chopped OR 1 1/2 lb Canned tomatoes drain juice
Freshly ground pepper 3 tb To 4 T cilantro :
chopped
Juice of 1/2 lemon -optional
Combine the lentils, water, and bay leaf in a large heavy-bottomed saucepan and bring to a boil. Reduce heat, cover, and simmer 30 to 40 minutes, until the lentils are tender. Add salt to taste. Drain and retain some of the cooking liquid. Heat the oil in a large heavy-bottomed skillet or casserole and add the onion and garlic. Saute over medium-low heat until the onion is tender and beginning to color. Add the green pepper and chili peppers and saute another 5-10 minutes until the pepper is tender and add the tomatoes and drained lentils. Add a little bit of cooking liquid from the lentils if the mixture seems dry. Simmer over medium-low heat for 15 minutes. Season to taste with more salt and pepper, stir in the cilantro and lemon juice if desired, and serve, or allow to cool and serve chilled. This dish will keep for 3-5 days in the refrigerator. *2 cups Urad/Maash Daal soaked overnight in 3 cups water????
*1-1/2 medium size chopped Onions
*4 tbsp Cooking Oil
*1-1/2 tspn Salt (or to taste)
*1 tspn Turmeric powder
*1 tspn Red hot chilli powder(or to taste)
*3 Tomatoes ????????????
*1tspn Chopped Ginger
*3 Hot Indian Green Peppers
*Green Coriander ????
*Black crushed Peppers
Method:
Boiled soaked daal/Lentils in separate pot with it’s soaked water. Do not drained the water.
Meanwhile fry onions in oil along with salt on medium to low heat keep frying them splashing water to prevent it from burning until light golden brown then pour spices Red chilli and Turmeric powder except the Black Pepper powder.
Now put tomatoes in the mixture stir for a second and let the mixture cook well with lid on it until it turns into a paste. Now pour Daal into the mixture stir and let it stand for 10-15 minutes covered on low heat. Garnish it with Ginger, Fresh Green Peppers & Green Coriander????❤️????

This is a fun cooking video I made while streaming on twitch, the recipe for my PLANT BASED UNSTUFFED PEPPERS & LENTILS turned out so good I had to share it here on YouTube. I hope you enjoy the video, it's a little silly and a lot of fun and flavor!
FULL RECIPE:
2 green peppers boiled in water and cut into strips, then layer on the bottom of a baking dish
Half a yellow onion Sautéed with the tops of the bell peppers I cut off (once cooked I added the items below)
In the same pan add in 1 can of fire roasted tomatoes
1 cup of cooked green lentils (Cooked in my Instant pot for 10 minutes)
1 cup of cooked white rice (or you could use cauliflower rice)
Add in fresh basil chopped and stir in
Season to taste with the following (or whatever is in your pantry) oregano, salt, pepper, red pepper flakes, garlic powder, onion powder, parsley flakes
Spread mixture on top of the layered green peppers
I added a little marinara sauce on the top and layered in more fresh basil a sliced tomato and topped it with some Dairy Free Mozzarella cheese
Broil for 4-5 min until “cheese” is a little golden brown
This would be really great if you added in some mushrooms or fresh spinach into the mixture! Play with it and make it your own!
