How To make Spicy Black Bean & Lentil Salad
2 c Cooked black beans
2 c Cooked red lentils
1 ts Dry mustard
3 tb Minced garlic
1 tb Fresh parsley, minced
1/2 c Rice vinegar
Juice from 1 lemon 1 ts Salt
3 tb Olive oil
1 ts Crushed red peppers
1 sm Butterhead lettuce, torn
2 lg Red bell peppers, sliced
2 lg Red potatoes, cooked, sliced
1/2 c Grated carrots
Put legumes in separate bowls. Whisk together mustard, garlic, parsley, vinegar, lemon juice, salt, oil & red pepper. Divide mixture evenly between legumes. Marinate covered in the fridge for 1 hour. Line salad plates with lettuce, top with peppers. Arrange small piles of potatoes, carrots & legumes on each plate. Drizzle marinade over the meal. VT July 1993

Easy Lentil Salad | Perfect Prep Ahead Lunch
Lentil salad offers a refreshing and delicious way to eat lots of protein and veggies. Mine is seasoned with fresh herbs and a lemon-based salad dressing.
Ingredients:
1 cup dried green lentils or 1 can cooked green lentils
1 English cucumber
1/3 cup finely chopped red onion
2 tomatoes
1/2 bunch curly parsley
6 mint leaves
1/3 cup crumbled feta cheese
1/4 cup olive oil
1/2 lemon
1 Tbsp dijon mustard
1 Tbsp honey

QUINOA SALAD INGREDIENTS
(use organic ingredients where possible)
2 cups cooked quinoa
1 clove garlic, pressed, grated or finely chopped
1 lime, juiced
1 teaspoon ground cumin
1 teaspoon fine sea salt
1/4 cup extra virgin olive oil
2 15 ounce can black beans, rinsed and drained well
1 red bell pepper, quarter inch chopped
6 green onions, root removed, white and part of the greens chopped
1 handful cilantro, rough chopped
1/4 teaspoon cayenne pepper (optional)

Black Lentil Salad
Get the full list of ingredients here:
Ingredients
• 2 cups cooked Black Lentil Beans
• ½ tsp Aged Balsamic Vinegar
• 1 ½ tbs Extra Virgin Olive Oil
• 1 tsp garlic, minced
• 2 tbs red bell peppers, chopped
• 1 ½ tbs red onions, chopped
• pinch of kosher salt
• pinch of black pepper
• 2 dashes of Crystal Hot Sauce
• 2 sprigs of cilantro
Method
- Wash your lentils and then cook boil them in a saucepan for about 30 minutes, or until tender and then drain them in a colander
-Place your lentil beans in a bowl and then add the balsamic and olive oil and mix them together to coat the beans.
-Add the garlic, bell peppers and onions and stir them all together
-Finish off by seasoning with a pinch of salt and pepper, cilantro and then season to taste with Crystal Hot Sauce
