How To make Spiced Pumpkin Bread with Orange Cream Cheese
1/3 cup butter or margarine
softened (2/3

stick) 1 1/4 cups sugar
1 cup solid pack pumpkin
1 egg
1 3/4 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon ground ginger
1/8 teaspoon ground allspice
1/2 cup dried currants
1/2 cup chopped pecans
orange cream cheese -- (recipe follows)
Using electric mixer, beat butter and sugar until light; add pumpkin and egg, mixing well. In medium bowl, combine flour, cinnamon, baking soda, salt, baking powder, ginger and allspice; gradually add to butter mixture, mixing until well blended. Stir in currants and pecans. Pour batter into greased 8 x 4-inch loaf pan. Bake at 350?F for 1 to 1 1/4 hours or until wooden pick inserted into center comes out clean. Cool in pan on wire rack 15 minutes. Remove from pan; cool completely on wire rack. Serve with Orange Cream Cheese. Orange cream cheese: In medium bowl, combine 1 package cream cheese, softened, 3 tablespoons sugar, 2 teaspoons Pure Vanilla Extract and 1 teaspoon freshly grated orange peel; stir until smooth. Stir in 1 to 2 teaspoons milk to make spreading consistency. Hint: For holiday gift giving, place wrapped bread in a decorative basket along with a container of Orange Cream Cheese.

Pumpkin Bread w/ Orange Cream Cheese Glaze
Ingredients
• 2 cups all purpose flour
• 1 tsp baking soda
• 1/2 tsp baking powder
• 1/2 tsp salt
• 1 tsp ground cloves
• 1 tsp ground cinnamon
• 1 tsp pumpkin pie spice
• 1 tsp ground nutmeg
• 3/4 cup unsalted butter, softened
• 3/4 cup brown sugar
• 1/4 cup white sugar
• 1/4 cup plain yogurt
• 1 15-oz can pure pumpkin
• roasted pumpkin seeds for topping
Instructions
• Preheat oven to 325 degrees. Grease two 8x4 inch loaf pans with butter and lime bottom with parchment paper.
• In a medium bowl, combine flour, baking soda, baking powder, salt, cloves, cinnamon, pie spice and nutmeg, and whisk until well combined. Set aside.
• In a large bowl, using an electric mixer, beat butter and sugar until blended. Add eggs one at a time ensuring beaten well after each addition. Continue beating for a few minutes until mixture is light and fluffy. Beat in the pumpkin. Beat in the yogurt.
• Add the flour mixture and mix on low speed until smooth scraping down the sides of bowl as needed.
• Scrape the batter into prepared loaf pans, diving mixture evenly between pans. Bake for 65-70 minutes or until toothpick test comes out clean. Cool loaves down for 10-15 minutes before taking out of pans to cool completely.
Optional Orange Cream Cheese Glaze
Ingredients
• 1/4 cup unsalted butter, softened
• 2 oz cream cheese, softened
• 1/2 cup icing sugar
• 1 tbsp milk
• 1/8 cup orange juice and zest
Instructions
• Beat butter until soft and then mix in cream cheese.
• Mix in icing sugar.
• Add orange juice and milk as needed to adjust consistency of glaze.
• Drizzle glaze over each loaf.
This Pumpkin Bread is so moist and tender and the warm spices make for the perfect fall treat! The optional glaze just adds the ideal amount of sweetness. These loaves freeze well and last up to 3 months.
