Welcome to the Aerogarden Homestead. Lots of things going on with winter around the corner so stay tuned. I'm making some lovely spiced applesauce cookies. They are a great fall and winter treat and a great way to use up applesauce. Recipe below.

Recipe:
Applesauce Cookies - 400F (10-12 minutes)
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 1 cup applesauce
- 1/4 tsp ground cloves
- 1 tsp Baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 cups flour
- 1 cup chocolate chips

When apple recipes are cooking in the kitchen, it is a sign that autumn has arrived. One of the first easy fall recipes that I make to celebrate the season is my EASY HOMEMADE SPICED APPLESAUCE. This applesauce is full of flavor and will leave your house smelling amazing. In addition, it pairs well with a multitude of main dishes like pork, chicken and beef. Do yourself a favor and make this applesauce today!

EASY HOMEMADE SPICED APPLESAUCE
8 - 10 cooking apples, cored, peeled & chopped
1 cup water, plus more for adjusting applesauce consistency
1 lemon, cut in half, for juicing
1 1/2 tsp apple pie spice
1/4 tsp ground cinnamon
pinch of salt
2 Tbsp brown sugar
1 Tbsp maple syrup
1. Over medium heat, stir and toast dried spices in a large pot, about 1 - 2 minutes. DO NOT ALLOW SPICES TO BURN. Add water and lemon juice. Stir. Add apples. Combine and bring to a boil. Cover pot and reduce heat to simmer. Cook while occasionally stirring until apples are fork tender, up to 12 minutes. Check at 8 minutes to see if apples are tender. If apples are not fork tender, continue to cook up to another 4 minutes.
2. Remove from heat and allow apple mixture to cool. Place apples and 1/4 cup of spiced apple juice (from pot) into food processor or high-powered blender. Process, on high speed, in 20 - 30 second intervals until you reach the consistency that you like. If needed, add more juice from the pot, 1/4 cup at a time. Continue to process until you reach desired consistency.
3. Pour applesauce back into the same pot and stir. Bring to a boil. Add brown sugar. Stir until dissolved. Add maple syrup. Stir until combined. If applesauce is too thick, add water and stir until applesauce is the consistency that you like. Remove from heat. Eat warm, at room temperature or chill in the refrigerator.

Learn how to make CAKE MIX COOKIES - using any brand cake mix and any flavor - with tons of mix-in ideas and tips! These are the easiest cookies with just 4 ingredients + your favorite mix ins and toppings.

INGREDIENTS
½ cup (113g) unsalted butter melted or softened
1 15.25 ounce box cake mix (any flavor; see notes)
2 large eggs
1 ½ cups mix-ins see notes for variations
INSTRUCTIONS
If using softened butter, you’ll need a hand or a stand mixer. If using melted butter, you can use a mixer or do the following by hand.
Place butter, cake mix, and eggs in a large bowl. Stir or mix until combined and no lumps remain. Stir in mix-ins.
Scoop 2-tablespoon balls of cookie dough onto a cookie sheet lined with parchment or silicone baking mats. No need to space them; we are chilling the dough. Chill for at least 30 minutes.
Preheat oven to 350°F. Line a second cookie sheet with parchment or silicone baking mat.
Space cookies 2-inches apart on cookie sheets. Bake for 10-13 minutes, or until they just lose their glossy sheen. These cookies stay puffy and will settle a bit as they cool but don’t become flat.
Immediately after removing from the oven press a few more mix-ins on top for decoration. Cool at least 10 minutes before removing from the cookie sheet.
Store in an airtight container for up to 3 days or freeze for up to 2 months.
