How To make Spice Cookies with Pumpkin Dip Part 2
See part 1 for ingredients Recipe by: TASTE OF HOME - OCT/NOV 95 In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add molasses; mix well. Combine flour, baking soda, cinnamon, ginger, cloves and salt; add to creamed mixture and mix well. Chill overnight. Shape into 1/2" balls; roll in sugar. Place 2" apart on ungreased baking sheets. Bake at 375 degrees for 6 minutes or until edges begin to brown. Cool for 2 minutes before removing to a wire rack. For dip, beat cream cheese in a mixing bowl until smooth. Add pumpkin pie mix; beat well. Add sugar, cinnamon and ginger; beat until smooth. Serve with cooking. 20 dozen (3 cups dip)

Ingredients:
•2 sticks cold, unsalted butter
•1 cup brown sugar
•½ teaspoon salt
•1 cold egg
•1 ½ teaspoons pumpkin pie spice
•3 ¾ cups all purpose flour
•2 tablespoons water
Directions:
•Preheat an oven to 350 degrees.
•Line cookie sheets with parchment paper.
•In a stand mixer with the paddle attachment, mix the cold butter, brown sugar and salt on low until they begin to incorporate.
•Add a cold egg and the pumpkin pie spice and mix on low until incorporated.
•While the mixer is still running, slowly add 3 ¼ cups of all purpose flour. A dough should soon form. If a dough does not form, add a tablespoon of water at a time until a dough does form.
•Sprinkle flour on a flat surface.
•Scoop the dough onto the flat surface.
•Sprinkle flour on the dough.
•Roll the dough out until it is uniformly about a quarter inch thick.
•Cut the dough to the desired shape(s).
•Place the cut shapes on the parchment paper lined cookie sheets.
•Mush any uncut dough back together and repeat steps 6-11.
•Bake in a 350 degree oven for 12 minutes.
•Let cool in the cookie sheet for 10 minutes.
•Move the cookies to a wire rack and let cool for an hour.
•Move to a paper towel lined container and let sit overnight, to soak up any excess butter, before icing.

GF Soft Pumpkin Spice Cookies
2 tablespoons cashew butter
2 tablespoons dairy-free milk
1/4 cup maple sugar
1/4 cup date or coconut sugar
(or 1/2 cup of one of the above)
1/3 cup pumpkin puree
1 teaspoon vanilla extract ( or 1/2 vanilla & maple extract)
1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1 cup oat flour
1 cup almond flour
1/2 teaspoon baking soda
pinch of sea salt
Cookies are great plain, but if you want icing use your favorite one or maple butter.
This is the quick icing I threw together!
Maple Icing (Optional)
1 cup organic or wfpb powdered sugar
2 tbsp. maple syrup
( or 1 tbsp. maple syrup & plant milk) add more if needed.
Roll the dough into balls and then flatten each one before baking. Bake at 350°F for 12-13 minutes on a parchment lined baking sheet. Let completely cool, eat as is or frost with your favorite icing recipe.

1/2 cup granulated sugar
1/2 cup brows sugar (packed)
1 tsp vanilla
1/2 tsp pumpkin spice liquid flavor (if you don't have this add this same amount in powder form)
1/3 cup pumpkin puree
4 1/4 cups all purpose flour
1 tsp pumpkin pie spice (powder)
1/4 tsp cinnamon
1/4 tsp baking powder
1/2 tsp salt

Everything pumpkin season is here and if you’re gonna put pumpkin on everything, pumpkin spice is the right way to go. And well, if pumpkin spice latte is so amazing already, why not make Pumpkin Spice Cookies?
In this video, I’ll be showing how to make the whole recipe for these delicious Pumpkin Spice Cookies from scratch, including the roasted pumpkin purée. In my opinion it makes it taste much better and it is healthier, so why not? But if you don’t feel like taking the time to make the pumpkin purée from scratch, you’re more than welcomed to use the ready to go canned version you find at grocery stores.
These cookies are soft and chewy and will melt in your mouth. The little addition of cinnamon and sugar on top adds a nice texture to the cookies. All the spices combined add a great warmth to the Pumpkin Spice Cookies and it really makes you have a little taste of Fall.

½ cup Pumpkin puree / 1 cup Pumpkin
½ cup Butter, melted
1 pc Egg
½ cup Brown Sugar
½ cup Sugar
1 tsp Cinnamon
½ tsp Nutmeg
½ tsp Ginger
½ tsp Cloves
½ tsp Salt
1½ cups Flour
½ tsp Baking Soda
To Coat Cinnamon & Sugar

Pumpkin Dip Made with Cream Cheese
Make this easy pumpkin cream cheese dip to bring to a holiday gathering or to treat yourself! This pumpkin cream cheese dip recipe comes together in only 5 minutes and tastes just like pumpkin cheesecake. You can easily make this pumpkin cream cheese dip recipe lower in fat by using a reduce fat cream cheese. Pumpkin cream cheese dip pairs perfectly with cookies, graham crackers, gingersnaps, and apples.
Ingredients:
8 oz package of cream cheese (room temperature)
1 1/2 cups confectioner sugar (sifted)
1 15 oz can pure pumpkin puree (do not use pumpkin pie filling)
1 tsp vanilla extract
1/2 tbsp pumpkin pie spice
1/2 tsp cinnamon
Directions
1. In a large bowl of a hand or stand mixer, add 1-8 oz. package of room temperature cream cheese mixing until it is light and fluffy.
2. In a small bowl, sift confectioner sugar to remove any sugar lumps. Fold in the confectioner sugar to the cream cheese and use a hand or stand mixer and mix until all the confectioner sugar is combined. Use a spatula to get all of the confectioner sugar into the mixture and continue mixing until all of the ingredients are combined.
3. Add pure pumpkin puree, vanilla extract, ground cinnamon, and pumpkin pie spice and mix into the cream cheese mixture until combined. Store this pumpkin dip in an air tight container for up to 1 week in the refrigerator.
