How To make Spaghetti with Tomatoes & Arugula
1 lb Spaghetti
2 c Arugula, chopped
6 ea Shallots, chopped -=OR=-
4 ea Garlic lcoves, chopped
2 tb Olive oil
2 c Tomatoes, chopped
Salt Red pepper flakes -=OR=- Cayenne, to taste Cook the pasta until almost *al dente*; add the arugula, cook for a few moments & then drain. Meanwhile, lightly saute the shallots or garlic in the olive oil. Add the tomatoes. Cook over high heat until the sauce thickens, then season with the salt & hot pepper flakes or cayenne. Toss the pasta & arugula with the tomato sauce & serve immediately. VARIATIONS: Add the arugula to the tomato sauce rather than the pasta. Use wholewheat pasta instead of spaghetti & broccoli tops instead of the arugula. This will need more red pepper flakes. Finish with a sprinkling of fresh herbs such as basil or oregano.

Easy Pasta Recipe (with tomato ,basil, and arugula)

Tomato Arugula and Basil Pasta
1. 4 garlic cloves, peeled and minced
2. 1/2 pound tomatoes(any kind), roughly chopped
3. 1 1/2 oz arugula, roughly chopped
4. 2 tbsp fresh basil, roughly chopped
5. 1/2 ts sugar
6. 1/2 salt
7. 1/2 ground black paper
8. 1 tbsp red wine vinegar
9. 6 tbsp extra virgin olive oil
Any tubular pasta such as rigatoni or penne 1/2 pound
Method
* Combine all the ingredients in a large bowl and let stand at room temperature for 3 hours.
* Toss with hot pasta and serve.

Arugula Pignoli & Pasta
1 pd spaghetti cooked & drained
2 packages arugula washed & trimmed
2 Tablespoons olive oil
1 1/2 teaspoons salt
2 teaspoons currants
1 tablespoon + 1 teaspoon pine nuts
Cook spaghetti according to directions. Set aside
Over medium heat add olive oil, add currants and allow to plump about one minute or so; add pine nuts and allow one minute stir thru; Reduce heat to a very low heat next add cooked & drained spaghetti to skillet and toss all ingredients together until incorporated.
Turn heat to a close; add fresh arugula; toss all ingredients until arugula is wilted and bright green about 45 seconds or so.
Serve on demand of hold under cover until dinner time.
The flavors are amazing. The highlight of this dish as gramma taught me is the peppery flavor offered up from Arugula.

Pasta with Tomato, Kalamata Olives and Arugula
15 Minute Garlic Cherry Tomato Pasta
Sauteeing garlic in olive oil until lightly golden and cooking tomatoes in that oil, until they burst, creates a flavorful and super simple sauce. The burst cherry tomato sauce goes perfectly with linguine or spaghetti. Top it with a handful of fresh basil leaves and good quality extra virgin olive oil and in about 15-20 minutes you'll have an awesome easy pasta recipe!

1 pound spaghetti
1 quart cherry tomatoes
1/2 cup packed basil leaves
10 cloves garlic
1 tsp kosher salt
1/4 tsp crushed red pepper
1/4 cup olive oil
1/4 cup extra virgin olive oil
1 cup pasta water
