This homemade Spaghetti and Meatballs is quite simple to make. No lengthy cooking required, and the sauce is made from scratch.
In contrary to what a lot of people think, Spaghetti and Meatballs is not an Italian dish, but rather an Italian American invention. No matter where it’s from, this recipe will put a smile on your face, and maybe a little sauce too!
Make sure you buy equal quantities of good pork and beef mince. It needs to have a little fat in there, go for around 15-20%.

Spaghetti and meatballs

1 lb (453g) ground beef (I like chuck)
1/3 cup (20g) breadcrumbs
1/3 cup (20g) grated pecorino or parmesan cheese, plus more for garnish
milk
1/2 tsp salt (or more)
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper
black pepper
olive oil
1 tbsp tomato paste
1 28 oz (800g) can crushed tomatoes
1/2 lb (225g) dried spaghetti
parsley or basil
Cover the breadcrumbs in milk and let them soak a minute. Put the beef, grated cheese, salt, garlic powder, onion powder, cayenne pepper, and a lot of black pepper in a bowl. Lift the bread crumbs out of the milk (and squeeze some milk out if you want the meatballs firmer) and put them in the meat mixture. Gently mix the meat mixture together with your fingertips until just combined — the mixture should not be totally homogenous. Roll the meat into balls about 2 cm wide. Ideally, let them sit covered and refrigerated for a while, even overnight.
Heat olive oil in a wide pan on moderate heat. Put in the meatballs, and cooking until the first side is browned. Carefully push the meatballs off the pan surface and try to brown the other sides as much as possible, taking care to not let the fond in the pan burn.
Put in the the tomato paste and fry it for a moment. Put in the crushed tomatoes and deglaze the pan. Stir frequently for 10-20 min until the sauce has reduced to your liking. Right before you eat, mix a little grated cheese and chopped herb into the sauce before tasting to see if it needs more salt.
Boil the spaghetti in salted water until almost done. Drain it and mix it into the sauce and meatballs, adding some of the cooking water if the sauce isn't liquid enough for you. Put it on a plate and top with more grated cheese and fresh herb.

BOLOGNESE SAUCE INGREDIENTS:
2 Tbsp extra virgin olive oil
2 Tbsp unsalted butter, plus 2 Tbsp more to toss pasta
1 1/2 cups chopped onion (from 1 medium onion)
1 celery stalk, finely chopped)
1 medium carrot, peeled and shredded
3 garlic cloves, minced
1 lb ground beef (20% fat), or use a mixture of beef and pork
1/2 tsp fine sea salt, plus more to taste
1/4 tsp freshly ground black pepper, plus more to taste
1 cup dry white wine (or red wine)
28 oz canned crushed tomatoes
1 1/2 cups hot water, plus more as needed
2 Tbsp double-concentrated tomato paste (or 4 Tbsp regular tomato paste)
1/4 cup parsley, finely chopped (or fresh basil), plus more to serve
1/2 cup whole milk
TO SERVE:
1 1/2 lbs papperdelle or tagliatelle pasta
Parmesan cheese, to serve

The meatballs are juicy with a light crust, and the spaghetti absorbs so much flavour whilst it cooks in the tomato ragu. This is a winning dinner with minimal washing up!

Ingredients:
Meatballs
500 g (1.1lb) minced beef I prefer to use a higher fat mince (12-20%) for more flavour
1/2 a large onion peeled and finely chopped
1 egg
3 tbsp grated parmesan
3 tbsp panko breadcrumbs
1/4 tsp salt
1/4 tsp black pepper
1 tbsp oil
1 tbsp unsalted butter
Sauce
1/2 a large onion peeled and finely chopped
2 celery sticks chopped
2 garlic cloves peeled and minced
1/4 tsp salt
1/4 tsp black pepper
400 g (14 oz) tin of finely chopped tomatoes
2 tbsp tomato puree (paste for USA)
1 tsp dried thyme
1 tsp light brown sugar
1 beef stock cube crumbled
600 ml (2 ½ cups) just-boiled water
200 g (7oz) dried spaghetti
To Serve:
shaved or grated parmesan
1 tbsp chopped fresh parsley
Instructions
1. Place the minced beef, chopped onion, egg, parmesan, breadcrumbs, salt and pepper into a large bowl.
2. Mix together using your hands, then form the mixture into 16-20 meatballs.
3. Heat the oil and butter in a large frying pan (skillet) and add in the meatballs. Cook for 5-6 minutes on a medium-to-high heat, turning two or three times, until the meatballs are browned all over. They don't need to be fully cooked at this point, as they'll cook further in the sauce.
4. Now we start adding the sauce ingredients to the pan. Move the meatballs to one side of the pan (or just make a bit of a space). Add the onion, celery, garlic, salt and pepper.
5. Cook for 3-4 minutes, stirring the vegetables a few times, until the onions start to soften.
6. Add in the tin of tomatoes, tomato puree, thyme, brown sugar, crumbled stock cube and the just-boiled water. Stir everything together and bring the sauce to the boil.
7. Make a bit of space in the pan and add in the pasta (break in half if it’s too big to fit in your pan). Ensure the pasta is fully submerged in the sauce.
8. Turn the heat down to low, place a lid on and cook for 10-12 minutes, stirring a couple of times, until the pasta is cooked. You will need to separate the pasta with a set of tongs to stop it sticking together when you come to stir it. Add in another splash of boiling water during cooking if required.
9. When the pasta is cooked, turn off the heat and divide the spaghetti between 4 bowls, using a set of tongs. Spoon the meatballs and sauce on top.
10 .Finish with a little shaved parmesan and chopped parsley and serve.
Notes
Can I make it ahead?
Yes, you can make ahead, but note: the pasta will absorb more of the liquid as it cools.If you did want to make ahead:
Cook the dish, then cool quickly. Place in a covered container and refrigerate for up to two days.
Take out of the refrigerator about an hour before reheating to take the chill off the meatballs.
Reheat in a pan with a lid over a low-to-medium heat for 10-15 minutes, stirring a few times during reheating, until piping hot throughout. You will probably need to add a splash of boiling water to loosen the sauce a little.
Can I freeze it?
Yes, leftovers can be cooled, placed in a covered container and frozen.Defrost overnight at room temperature, then reheat as per the instructions above.
Want to change it up?
If you make this recipe a lot and want to change it up every now and then, try:
Adding a teaspoon of chilli flakes or a tablespoon or sriracha to the sauce for a spicy version.
Add 4 tablespoons of double (heavy) cream to the sauce, once the pasta is cooked, for a creamy tomato version.
Top the finished dish with halved cherry tomatoes, a drizzle of pesto and some basil leaves for a fresh Summer version.
Sprinkle 1 tablespoon of Cajun spice on the meatballs when frying, then add in chopped chorizo with the onions and celery for a Tex-Mex twist.

For the pasta:
1 lb (450g) Spaghetti
For the meatballs:
1½ pounds (675g) Ground beef/pork/Italian sausage or combination
1 Egg
1/2 cup (50g) Breadcrumbs
2 tablespoons Parsley, chopped
Salt to taste
Pepper to taste
2 tablespoons Parmesan cheese (optional)
2 tablespoons Oil
For the sauce:
1 tablespoons Olive oil (if needed)
1 Onion, large
3-4 Garlic cloves, minced
2 cans (28oz/800g) Tomato sauce
1 cup (240ml) Water
1 teaspoon Dried oregano
1 teaspoon Paprika
Salt to taste
Black pepper to taste
5-6 Basil Leaves, chopped
2 tablespoons Parsley, chopped
Parmesan cheese for serving
Directions:
1. Make the meatballs: in a large bowl combine meat, breadcrumbs, egg, parmesan, parsley, salt and pepper. Mix until well combined. Shape into small balls.
2. In a large pan heat 2-3 tablespoons of oil. Place the meatballs in the hot oil (in two batches if there is no enough place). Cook until browned on all sides, about 1-2 minutes on each side. Or 4-6 minutes in total. Remove meatballs from the pan and set aside.
3. Make the sauce: in the same pan/skillet add 1 tablespoon of olive oil and heat over medium heat. Add chopped onion, sauté until golden, about 5-6 minutes, add garlic and sauté for 2 minutes more.
4. Pour in tomato sauce, water, season with salt, pepper, paprika and oregano. Bring to sauce to a boil, add the meatballs, cover with a lid, reduce the heat to low and simmer for 20-30 minutes, stirring frequently.
5. Make the pasta: fill a large pot with water, add 1 tablespoon of salt and bring to a boil. 10 minutes before the meatballs are ready, add the pasta to the boiling water and cook according to package directions.
6. Drain and add to the sauce, add chopped parsley, chopped basil and stir.
7. Transfer to a plate and grate some parmesan cheese on top.
