How To make Southwestern Meatball Soup
3/4 lb Ground Beef
3/4 lb Ground Pork
1/3 c Uncooked long grain Rice
Egg, slightly beaten 1 t Dried Oregano
1 ds Salt & Pepper, to taste
Med Onion, peeled & minced Clove garlic, crushed 2 T Salad Oil
1/2 c Tomato paste
10 c Beef Bouillon
1/2 c Chopped fresh coriander
Can substitute parsley for coriander, if neccessary. Combine beef, pork, rice, egg, oregano, 1 teaspoon salt and 1/4 teaspoon pepper (or to taste) in a large bowl. Shape into small balls, about the size of golf balls. Saute onion and garlic in heated oil in a large kettle until tender. Mix in tomato paste. Add bouillon; season with salt and pepper. Bring to a boil. Add meatballs and reduce heat. Cook slowly, covered, about 30 minutes, until meatballs are cooked. Stir in coriander or parsley. Serves 6 to 8.

SOUTHWESTERN MEATBALL STEW

Big Flavor, filling and low calorie
Recipe serves 2 large servings or 4 small servings
Recipe: 1 medium potato diced into 11/2 inch diced, 1 cup chopped fresh tomatoes, 1 jalapeno seeded and chopped, 1/2 red onion diced, 1 Tbsp cilantro chopped, 2 Tbsp chopped green onion, 1 Tsp granulated fresh roasted garlic or chopped garlic.
Heat 2 Tbsp olive oil saute potatoes about 6 to 8 minutes on medium heat, then add the rest of the fresh ingredients, saute 2 minutes.
Add a can of fire roasted diced tomatoes and 1 cup of water, 1 Tbsp of lime juice, and 3 or 4 Tbsp of chopped green chili.
Add Seasonings: 1 tsp chili powder. 1 tsp onion powder, 1 tsp cumin, 1 tsp garlic powder and 1/2 tsp salt and 1 tsp black pepper
Simmer 8 to 10 minutes.
Slice up a few corn tortillas, place on cookie sheet, drizzle some oil, sprinkle cumin, chili powder, bake at 400* for 5 minutes.
Drop in eggs make sure they are submerge in the soup cover 5 minutes uncover add about 2 Tbsp cheddar let melt and serve.
Garnish with tortilla strips, cabbage or some shredded lettuce. For fancy garnish set aside 2 Tbsp of the fresh ingredients and top soup with them before serving.

INGREDIENTS:
●2 lbs ground beef , i use (pork,veal,beef combo)
●1 cup fine soft bread crumbs
●1/4 cup finely chopped onion
●1 egg
●1 1/2 teaspoons salt
●1/4 teaspoon pepper
●1/4 teaspoon dried thyme
●1 tablespoon butter
●1 tablespoon oil
●1 (14 ounce) can tomato sauce
●1 (10 ounce) can beef bouillon or 1 (10 ounce) can consomme
●1 cup dry red wine
●1 cup water
●1 (250 g) bag frozen pearl onions (or use fresh)
●2 cloves garlic , minced
●4 potatoes , peeled and cut in large cubes
●4 carrots , cut in
●1 inch chunks (can use a bag of baby carrots)
●1/2 lb mushroom , quartered
●1/4 cup parsley , chopped
●2 tablespoons flour
●1/2 cup cold water
