The BEST SOURDOUGH Chocolate Chip Cookies
Sourdough chocolate chip cookies:
1 cup butter softened
3/4 cup sugar
1 cup brown sugar
1 egg
1 tsp. Vanilla
1/2 cup sourdough discard
3/4 tsp salt
3/4 tsp baking soda
3 cups flour, I used kamut flour, but any flour will do
1 bag chocolate chips of your choice ( I like semi-sweet)
Preheat oven to 350 degrees
Cream together butter and sugars then add egg, vanilla, and sourdough, cream really well.
Next add, salt, baking soda, and flour until it comes together.
Add in one bag of chocolate chips and stir by hand.
Cover bowl with plastic wrap and refrigerate for 2-6 hours to let the sourdough ferment ( if you can wait that long, I couldn’t wait that long ????).
Roll into 1/4 cup dough balls and place on parchment paper on a baking sheet. Press Dough balls down.
Bake for 8 minutes and then let cool on baking sheet for 5-10 minutes. Sprinkle with salt flakes and enjoy!
Store remaining cookies in a ziplock bag or an airtight container. Cookies freeze really well too.

Sourdough Oatmeal Cookies
It seems like everyone has jumped feet-first into sourdough. And why not? It is easy, doesn't need yeast, and tastes amazing. But sourdough is a pet that you have to feed regularly. Every time you feed it, you have to get rid of some. Rather than throwing it out or composting it, why not put it to use? These sourdough cookies might just be what the doctor ordered.
These cookies are incredibly easy to make, and pandemic friendly because they don't use those precious eggs. The cookies are light, chewy, and haven't lasted more than an hour after baking in my house. Because there are no eggs you could even easily modify this recipe to be vegan! What's not to love?
Recipe (modified from a recipe found in Sourdough Jack's Cookery):
500g thick sourdough starter
1tsp vanilla extract
340g brown sugar
115g butter
115g vegetable shortening
200g plain flour
234g rolled oats
1tsp cinnamon
1/2tsp cloves
1/2tsp allspice
1tsp baking soda
150g raisins or other dried fruit
Cream the butter, shortening and brown sugar. Beat in the starter and vanilla extract. Sift the flour. Sift again (or mix with a whisk) the flour cinnamon, cloves, allspice, and baking soda. Mix the dry ingredients, in three batches, into the wet (the butter, sugar, sourdough mixture). Once well combined, gently mix in the raisins.
Turn the dough out of the mixing bowl and onto a sheet of parchment paper. Spread wide across the paper and fold the paper over in order to roll into a log. Use the edge of a sheet pan, while holding the bottom flap of paper to keep it in place, to push the dough into a tube.
Chill for several hours or overnight.
Cut into circles, remove the paper, and bake on a parchment lined baking sheet for 12-15 minutes at 190C. Cool on a wire rack.

Make chocolate chip muffins with your sourdough starter! Only takes about 30 minutes total to make these. Why use sourdough starter in a muffin recipe? Sourdough discard contains beneficial bacteria and yeast, which may have probiotic properties. Although the discard is typically no longer active enough to provide significant leavening power, it can still offer some nutritional value!
In a bowl mix:
80g European butter (softened)
80g olive oil
200g sugar
2 eggs
Add to bowl:
75g sourdough discard
75g plain Greek yogurt
225g milk
4g vanilla extract
Whisk dry ingredients in separate bowl and then add to wet bowl:
350g flour
12g baking powder
2g baking soda
4g salt
3g cinnamon
Pinch of nutmeg
After everything is mixed, at in 300g of semi-sweet or dark chocolate and fold into mixture.
Makes about 16 muffins in a standard muffin tray.
Bake at 425F for 5 minutes, and then 350F for 12-16 minutes or until tops are golden brown.
