How To make Sourdough Banana Pancakes
2 c Unbleached pancake mix
1 Egg lightly beaten
6 tb Yoghurt
Buttermilk, as desired Skim milk, as desired 1 Banana, sliced thin
Mix the above with equal amounts of buttermilk and skim milk, with the total amount determined by desired thinness or thickness of mix. (It should not be too thin.) As it is ladled out, in pan or griddle, apply thinly [sic] sliced bananas on uncooked side. Turn when need [sic] to brown other side. Here are the conversions:
42 g unsalted butter
8 oz. sourdough starter
8 oz. buttermilk (may use milk)
2 eggs
25 g sugar
5 g vanilla
180-240 g flour
5 g baking powder
5 g baking soda

Sourdough Banana Cake II Sourdough Discard
Sourdough Banana Cake is a simple and tasty way to use the discard from your sourdough starter.

For 1 Sourdough Banana Cake, you will need:
2 large eggs, room temperature
230 grams granulated white sugar or light brown sugar
3 ripe bananas, peeled and mashed
113 grams butter or margarine, melted and room temperature
80 grams all-purpose flour
1 tsp baking soda
1/4 tsp salt
220 grams sourdough discard 100% hydration, unfed or discard
25 grams nuts, finely chopped (optional)
1 tsp vanilla extract
25 grams oatmeal (optional)

Fluffy Vegan Banana Sourdough Pancake with coconut milk in 2019
This recipe will be a success if your Sourdough Starter is very thick. So please feed your starter the night before to make a very thick paste. (Mine was a little bit thin so it makes it harder to work with)
1 C Sourdough Starter, Fed within the last 12 hours
1 C Coconut Milk (Fat only, the thin coconut milk you may use for smoothies)
1 Big Banana
1 Flaxseed Egg (1 Tbsp Ground Flaxseed + 3 Tbsp warm water)
1 tsp Cinnamon powder (depending on your taste)
½ tsp Salt, ½ tsp Baking Powder, ½ tsp Baking Soda,
½ TBSP Apple Cider Vinegar or Lemon Juice
1 tsp Vanilla
When cooking the pancake, I use an 8-inch pan with a tsp of Coconut Oil. If your starter is very thin, you will have issues when you try to flip the pancake.
Very moist and soft, I get 5 big pieces. Serve with fresh banana and maple syrup.
4 (Easy) Ways To Use A Sourdough Starter
Okay, so let's say you've got your sourdough starter. You're making bread (or you plan on it), but now you want to start doing something with the stuff you throw away when you feed it. Here are some of my favorite ways to use my sourdough starter discard. A real deal sourdough hack, to using pretty much all of your sourdough starter while leaving just enough to feed it.

Banana Bread:
1 cup (224g) unsalted butter
1 1/2 cups (360g) granulated sugar
2 cups (300g) all purpose flour
1 teaspoon (5g) baking soda
1/2 (3g) teaspoon kosher salt
3 bananas (ideally overripe) mashed with a fork
2 whole eggs
1 teaspoon (4g) vanilla extract
1/2 cup (145g) mature sourdough starter
Pancakes:
1.5 cups (225g) all purpose flour
3 tablespoons (40g) brown sugar
2 teaspoons (8g) baking powder
1 teaspoon (6g) baking soda
1/2 teaspoon (3g) kosher salt
1 cup (215g) milk or almond milk
1 egg
1/2 cup (145g) mature sourdough starter
Cookies:
(use this recipe and add 1/4 cup (72g) mature sourdough starter to the dough)
