EASY Christmas Snowballs - Pecan Balls - So Easy, ANYONE Can Make These
INGREDIENTS:
1 cup all purpose flour
1/2 cup (4 ounces/113 grams) butter, softened - I use unsalted
1 cup finely chopped toasted pecans
3 Tablespoons granulated sugar
1 teaspoon pure vanilla extract
1 cup powdered sugar for rolling

The Wareings Snowballs I enjoyed as a child has a unique consistency - between a biscuit and a cake. They are dome shaped with Apricot jam in the middle, and coated in coloured coconut. as you can see, these are the same. If you wish to make them for South African guests they will be very impressed with your choice. Enjoy with a glass of milk or a hot drink! In this video tutorial we show you how to make Durban snowballs identical to the ones sold in stores.

Makes 12
Ingredients
250g Unsalted Butter, cubed & softened
1 cup Castor Sugar
3 cups Plain/Cake Flour
6 tsp, level Baking Powder
4 Eggs, at room temperature
Coconut Layer:
1 cup Coconut
1-2 tbsp Red Food Colouring
Syrup/Glaze:
2 cups Water
2 cups Sugar
¼ cup Apricot Jam
1 tsp Red Food Colouring
1 tsp Strawberry Essence

INGREDIENTS
FOR THE CAKE
Nonstick cooking spray, for pan
1 box Devil's food cake mix, plus ingredients called for on box
8 oz. cream cheese, softened
1/3 c. marshmallow crème
1 large egg
2 tbsp. sugar
1 tbsp. flour
1 tsp. pure vanilla extract
2 c. sweetened shredded coconut
pink food coloring
FOR THE FROSTING
1/2 c. butter, softened
7 1/2 oz. jar marshmallow crème
3 c. powdered sugar
DIRECTIONS
1. Preheat oven to 350° and grease a 2-quart oven-proof Pyrex bowl with nonstick cooking spray. Prepare cake mix according to package instructions and pour into prepared bowl.
2. In a medium bowl using a hand mixer, beat together cream cheese, marshmallow crème, egg, sugar, flour and vanilla until smooth. Spoon mixture into the center of the batter in the bowl.
3. Bake until toothpick inserted in center of the cake comes out clean, about 1 hour. Let cool in bowl for 10 minutes, then loosen cake from bowl with knife. Invert onto wire rack to let cake cool completely.
4. While the cake is cooling, dye the shredded coconut pink: In a large bowl filled with the coconut, add a few drops of pink food coloring.
5. Toss with your hands or a fork until all of the coconut is pink, adding more food coloring if necessary.
6. Make frosting: In a large bowl using a hand mixer, beat together butter and crème until the mixture is evenly incorporated and fluffy. Add powdered sugar and beat until the mixture is smooth.
7. When the cake is cool, cover completely with frosting using an offset spatula and press pink coconut into the frosting.
