Prep Time: 30 minutes
Cook Time: 20 minutes
Total Time: 50 minutes (+ 15 minutes chilling time)
Makes: 24
Ingredients:
Chocolate Chip Cookie Crust:
2/3 cup butter, softened
1/2 cup brown sugar
1 egg
1 1/3 cups all-purpose flour
Pinch salt
1/2 cup mini chocolate chips
Fudgy Brownie Filling:
6 tbsp melted butter, warm
1/2 cup granulated sugar
1/4 cup cocoa powder
1 egg
3 tbsp all-purpose flour
Pinch salt
12 Mini Snickers
Football Garnish:
24 Mini Snickers
White royal icing
Instructions:
Chocolate Chip Cookie Crust: Preheat oven to 325[Symbol]F. Grease 24-cup mini muffin tin; set aside.
Using electric mixer on medium-high speed, beat butter with sugar for about 3 minutes or until light and fluffy. Beat in egg just until incorporated; beat in flour and salt. Stir in chocolate chips. Refrigerate for 15 minutes.
Fudgy Brownie Filling: Meanwhile, stir together warm melted butter, sugar, cocoa powder and egg until well combined. Stir in flour and salt. Let stand at room temperature.
Meanwhile, divide cookie dough evenly among mini muffin cups. Press evenly to cover bottom and up side of each cup. Cut Mini Snickers in half and place in center of each cup. Spoon brownie batter over Mini Snickers to fill each cup.
Bake for 15 to 18 minutes or until brownie is set in center and cookie is lightly golden brown around edges. Let cool slightly in pan on rack.
Football Garnish: Place 1 Mini Snickers on each cup; press lightly to adhere. Let cool completely. Using royal icing, pipe “football laces” on each Snickers. Let stand until icing is set.
Tips:
• Prepared royal icing is available in squeeze tubes in the baking aisle.
• Brookie Bites can be stored in an airtight container at room temperature for up to 3 days.
