HOW TO SMOKE A TURKEY
______________________________________________________________
WHAT YOU WILL NEED:
- 13lb turkey (thawed)
- 1/2 cup butter
- 1 tbs garlic infused olive oil -
- 1 tbs Rosemary infused olive oil -
- BBQ Rub of your choice - (email postalbarbecu@gmail.com to purchase mine)
STEP #1
To prepare your turkey, start off by trimming up and of the large bits of fat, and then tuck the wing tips around the back of the breasts. Next, inject your turkey with the butter and olive oil injection until you have used it all up. Once injected, apply your bbq rub to the outside of the turkey until it is coated well.
SETP #2
Once your turkey has been prepped, set up your pit barrel cooker for cooking around 275F (this is it's default cooking temp if set up right). Place the turkey into the pit barrel cooker, along with the rebar, close the lid and begin smoking your turkey.
STEP #3
After around 3.5-4 hours your turkey should have an internal temperature in the breast of around 165F and the leg portions should be 175F or higher. Once you have reached your finishing temperature, remove it from the pit barrel cooker, let it rest then slice in and enjoy the feast!

Set your KJ to cook at 190C throughout
(220C for Yorkshire Puddings)
Tips:
Grate the butter before mixing in the flavours
Yorkshire Puddings – really cold batter hitting really hot rapseed oil (220C) and also have lots of oil – Yorkshire’s need it!
The Gravy ????
----------------
Chicken wings in a roasting tin
Season
2 onions quartered
Bulb of garlic, sliced in half
Loads of thyme
2 carrots
Glug of Wharfe Valley Rapseed oil
Work together in the tray
Place this below the turkey
Cook down until the wings are really dark and cooked through – about an hour at 190C
After an hour add ½ bottle of white wine
Leave to continue to reduce
Add 2 large spoons of flour into the gravy
Work it into the gravy, then add
1 and ½ litres of boiling water, mix and back into the Kamado
Cook for another 30-40mins.
Loosen off all the bits from the side and bottom and work into the gravy.
Mash it all together, and get the meat off the bones.
Strain through a sieve into a bowl.
The Fatty ????
---------------
1kg sausage meat
300g breadcrumbs
Lots of thyme and sage leaves (chopped)
Red onion diced small
Large handful of chopped walnuts (chopped small)
Large pinch of fennel seeds
Pinch of pepper (no salt)
Mix it all together and shape it into a large fat sausage cylinder!
Stretch out 16 rashers of streaky bacon
Create a lattice to make a ‘square’ of bacon
TIP: do this on a piece of greaseproof paper to make it easier to wrap
Wrap the fatty in the bacon – pat it all in and make sure the lattice is tight.
Pop it into a baking tray, and brush with maple syrup.
Cook for about an hour
Internal temp to 70C
Carve into think slices ????

Smoked BBQ Turkey | Easy & Delicious Spatchcock Smoked Turkey On A Pellet Grill
In today's video I am cooking up a delicious smoked BBQ turkey! Now, this isn't your typical run of the mill Thanksgiving smoked turkey. This smoked turkey has big bold flavors, and is a nice change of pace from a traditional bird. I spatchcocked this turkey to allow for the entire smoked turkey to cook evenly, and it was delicious! If you want a turkey that will absolutely blow your guests away this Thanksgiving, then you have to make this smoked BBQ turkey! The nice thing about this cook is that cooking it on the pellet grill allows you to spend more time with your guests, but gives you an amazing flavor!!

Prep:
1. Begin by making your brine per the package instructions. Allow the brine to completely cool to below 40°F before pouring it over your turkey.
2. Once the brine has cooled to a food safe temperature, completely submerge your turkey in the brine and refrigerate for 12-24 hours.
3. After the turkey has brined for 12-24 hours, remove from the brine and pat dry.
4. Spatchcock the turkey by using heavy duty kitchen shears and cutting out the spine.
5. Once the spine has been removed, pat the cavity of the turkey dry. Once the cavity is dry, take a heavy duty butchers knife and slit the top of the breast bone so the turkey lays flat.
6. At this point season your turkey starting with the inside cavity of the turkey. Season with a light layer of Tailgater's BBQ Party Rub, followed by a light layer of my Ash Kickin' BBQ Honey Chipotle Rub.
7. After the inside cavity of the turkey has been seasoned, flip the turkey over so the skin side is up and put onto a wire rack. The wire rack will making transporting the turkey to the smoker easy, and it will also allow you to rotate the turkey for even cooking if needed.
8. Once the turkey is on a wire rack, season the skin side of the turkey with the Tailgater's BBQ Party Rub and the Ash Kickin' BBQ Honey Chipotle.

1. Set the temperature to 275º F.
2. Put the turkey on the smoker, and allow to smoke undisturbed for at least one hour.
3. After an hour has passed, it's a good idea to get a probe in the thickest part of the turkey breast. Insert your probe, and then spray the turkey with a vegetable spray, or drizzle melted butter on it. Repeat every 30 minutes until the turkey is done and it's time to sauce.
4. Once the turkey hit's about 158°F, it's time to sauce the bird. Drizzle some raspberry honey chipotle BBQ sauce on the turkey and brush evenly. Allow the sauce to set until the turkey reaches 160° F.
5. Once the turkey reaches 160° F, remove from the smoker and let rest on the counter uncovered for 15-20 minutes. Please note: The turkey will continue to cook after it is removed from the smoker. Pulling the smoked turkey at 160°F will allow carryover cooking in the turkey to reach 165°F. If you are not comfortable pulling your turkey at 160°F, continue letting the turkey cook on the smoke until desired temperature has been reached.
6. After the turkey has rested for 15-20 minutes, carve your BBQ smoked turkey, eat and enjoy!!

HOW TO SMOKED TURKEY BREAST
______________________________________________________________
INGREDIENTS:
- Turkey Breast (ours was two wrapped together)
- 1/4 cup melted butter
- Postal Barbecue - CHICK'N RUB (or rub of your choice)
STEP #1
To prepare your Turkey breasts for the smoker, first we need to help it out a little bit by adding some richness and moisture as well as some great flavour as turkey breasts can easily come dry and lack flavour. To start with take your melted down butter and inject your boneless turkey breast filling the inside with that rich buttery flavour. Once injected, apply your favoruite BBQ rub for poultry. I used the new Postal Barbecue CHICK'N Rub which add incredible flavour to all things poultry.
Step #2
With your Turkey Breasts all prepared, place it onto the grill opposite the coals and begin smoking your roast between 300-325F. We will be bring the internal tempreture up slowly to 160F-165F. During the cook, I also added in some cherry wood to provide a little bit of delicious smoky flavour and let it smoke away.
Step #3
After about 1 hour 40 minutes your turkey breasts should be at or nearing your target tempreture (NOTE: If you are only cooking a single turkey breast your times will be shorter). At this point remove it from the grill to let it rest for a few minutes before slicing it up and enjoying your feast!

How to BBQ a Turkey on the Weber Kettle~Easy Cooking
In this easy cooking video, I BBQ a turkey on my Weber Kettle charcoal grill. I used Royal Oak lump charcoal in my Slow 'N Sear and kept my vents wide open so the grill was pretty hot. I seasoned the turkey with The Rub by the J Christopher Company. The cooking time for this turkey was 2 hours and 15 minutes, but cooking times will vary depending on the size of your turkey and how hot your grill is.
