DUTCH SPECULAAS COOKIES - DUTCH SPICE COOKIES
Speculaas come from the latin word 'speculum' meaning mirror''refer to the way the mold creates a mirror image in the cookies.
You don't have to use a mold or cookie stamp, just use what you have in your house to shape the cookies and then you can enjoy this easy and tasty spice cookies and fire-up the Christmas Spirit by whipping up these festive cookies.

Step 1: Prepare Dry Ingredients
Ingredients:
200 grams all purpose flour
50 grams dark brown sugar
50 grams light brown sugar
4 teaspoon speculaas spices
1 teaspoon baking powder
1/4 teaspoon sea salt
Step 2: Prepare Wet Ingredients
Ingredients:
100 grams cold salted butter
2 tablespoons water
Step 3: Prepare The Garnish
Ingredient:
50 grams almond
Step 4: Prepare The Oven
Heat the oven to 350 F or 180 C and bake for 15-25 mins depending on the size and thickness of the cookies.

5 spice cookies
4 cups flour
1 ½ teaspoons baking soda
1 ½ cups raw sugar
1 cup butter
2 eggs
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 pinch sea salt
1 cup milk, or as needed
Preheat the oven to 350 degrees F. Line baking sheets with silicon mats or parchment paper
Combine flour and baking soda . Mix well. Set aside.
Combine sugar, butter, eggs, cinnamon, nutmeg, cloves and salt. Mix well,
Add flour mixture to butter mixture alternating until all the flour is added and enough milk is added to make a firm dough.
Drop by the cookie scoop full onto the prepared baking sheets. Press down lightly.
Bake until golden brown, about 10 to 15 minutes. Let stand on the baking sheets for 1 minute before removing to a wire rack to cool.

The Recipe
1/2 lb (2 sticks) salted butter softened
1 cup white granulated sugar
1/4 cup light brown sugar
1 packet instant coffee dissolved in about a tablespoon of hot water
2 teaspoons vanilla extract
1/4 cup pumpkin puree
2 large eggs
4 cups all purpose flour
1/3 cup corn starch
1/4 tsp. salt (optional)
1 tablespoon (more or less depending on your taste) pumpkin pie spice
preheat oven to 350
cream together butter and sugars
add instant coffee, vanilla, pumpkin, and eggs until combined
sift together dry ingredients (flour, corn starch, salt, and pumpkin spice)
slowly combine wet and dry ingredients until dough is smooth
roll out between parchment and baking mat
freeze in sheets between parchment before cutting and bake while dough is still cold for 7-8 minutes or until dough is no longer shiny

1939 Sour Cream Cookies - Old Cook Book Show
This cookie recipe is from the Home Economics textbook used in Spokane Washington in 1939. They were a good cookie, but needed a lot more sour cream than the recipe called for. This is a light spice cookies recipe on the old cookbook show.
Sour Cream Cookies
2 ¼ c. sifted flour (I did sift)
3 t. baking powder
½ t. soda
¼ t. salt
½ c. shortening
⅔ c. packed brown sugar
1 egg beaten
½ c. heavy sour cream (recipe needed at least ½ cup extra)
½ t. cinnamon
¼ t. nutmeg
½ c. raisins
Method:
Sift flour once, measure add baking powder, soda, salt and sift together. Cream butter and add sugar gradually creaming until light and fluffy. Add egg and beat well. Add flour, alternately with sour cream, beating after each addition until smooth. Drop from teaspoon on ungreased baking sheet and bake in a hot oven, 8-10 minutes.

***I know that in the video it sounds like I didn't sift the flour before measuring - But I did. In older recipes like this that ask you to sift, then measure; sifting is important to get the right measurement. Recipes that ask you to measure, then sift; I hardly ever sift.

INGREDIENTS:
2 teaspoons Folgers Classic Roast® Instant Coffee Crystals
1 teaspoon hot water
1/2 cup Crisco® Butter Flavor All-Vegetable Shortening
OR 1/2 stick Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
3/4 cup firmly packed brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 1/2 cups Pillsbury BEST® All Purpose Flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/3 cup chocolate decorator bits
PREPARATION DIRECTIONS:
1.DISSOLVE instant coffee in hot water. Beat shortening, brown sugar, egg, vanilla and coffee mixture in large bowl with electric mixer until light and fluffy. Mix in flour, baking powder, cinnamon, nutmeg and salt.
2.DIVIDE dough into two equal parts. Shape each half into a roll 7-inches long x 1 1/2-inches in diameter. Roll in chocolate decorator bits, pressing lightly. Wrap tightly. Refrigerate at least 2 hours.
3.HEAT oven to 375ºF. Cut rolls into 1/4-inch slices. Place slices 1-inch apart on ungreased baking sheet.
4.BAKE 6 to 8 minutes or until set. Cool on rack.
