How To make Sizzling Beef Fajitas
4 cl Garlic, minced
1 tb Lime juice
1/3 c Worcestershire or soy sauce
4 Serrano chiles, stemmed
And minced 1/4 c Apple cider vinegar
14 cn Beef broth
2 tb Safflower oil
2 Yellow or white onions,
Thinly sliced 2 Bell peppers, thinly sliced
4 Limes, cut in half
1 c Sour cream
3 lb Skirt steak, 1/2 inch thick

Flour tortillas Pico de gallo Guacamole

At least 3 hours before grilling the meat, trim it to remove all fat and gristle. For skirt steak, use a flat metal pounder to tenderize. {This is needed because of the short marinading time.} Put the meat in a shallow glass dish or plastic bag. Combine the marinade ingredients. Marinate for about 3 hours in refrigerator. About 45 minutes before serving, clean the grill surface and rub it with an oil dampened cloth. Preheat the grill for about 30 minutes. Remove the meat from the marinade. Sprinkle the meat and salt and pepper and place it on the grill. Baste with marinade, grill, then turn, baste again and grill until medium rare, about 5-6 minutes in all, or until desired doneness. Remove, cover with foil and keep warm. Heat 2 TBSP oil in a cast-iron skillet over medium-high heat. Add the onions and cook until browned, but still crisp. Remove and add bell peppers. Saute about 2 minutes and add onions. Remove the skillet from the heat. Preheat the oven to 450 degrees F. Wrap the tortillas or pita breads in foil and heat until warm, 8-10 minutes. {Or zap 'em in a microwave for 15 to 25 seconds per tortilla, depending on your microwaves strength. Or grill 'em on the coals for a few seconds, or in another cast iron skillet for a few seconds.} Cut the beef across the grain into strips about 1/4 inch thick. Reserve all the juices. Put the skillet back on high heat long enough to get hot, then add the meat. It will sizzle. Turn immediately, then put the onions and peppers on top. Pour the reserved juices on top to create a sizzle. (For an even more dramatic sizzle, you can drizzle the meat and onions with 2 TBSP oil instead of the reserved juices.) Carry the skillet immediately to the table. Squeeze lime juice on top. To serve, use tortillas to enclose meat strips, peppers, onions, pico de gallo, guacamole, and sour cream.

INGREDIENTS
2 lbs flank steak (or beef skirt steak)
2 bell peppers
1 medium onion
*MARINADE*
1 cup fresh orange juice
1/3 cup fresh lime juice
1 tbsp Maggi seasoning sauce (or soy sauce)
1 tsp onion powder
1tsp garlic powder
1 tsp smoked paprika
2 tsp chili powder
1/4 tsp ground cumin
1/2 tsp salt
pepper to taste
*CHICKEN FAJITAS*
1 lb chicken breast

Sizzling Steak Fajitas | Meatless Monday Week 46
This is an awesome use of leftover homemade seitan (BBQ or regular). The recipe to make your own seitan and BBQ Sauce for the marinade is our week 2 Meatless Monday post at:

Cooking Time: 20 minutes
Yield: 6 Fajitas
INGREDIENTS FOR FAJITAS
4 cups seitan strips or beefless vegan strips (see homemade seitan if you'd like to make your own, or use leftover BBQ Seitan)
1 package Simply Organic® Fajita Seasoning (about 1 oz), or the Mexican Seasoning of your choice
½ onion, sliced thin
2 large portobello mushrooms, sliced about ¼ inch thick (you can use 6 small mushrooms as well)
½ orange pepper, sliced
½ yellow pepper, sliced
1 can (14 oz.) black beans, rinsed and drained
4 tablespoons sweet corn chili salsa (we use Trader Joe's brand)
6 tablespoons salsa or pico de gallo
3 tablespoons chopped cilantro
6 flour tortillas
guacamole (optional)
chopped green onions (optional)
Oil for sautéing (I prefer grapeseed oil)
DIRECTIONS
1. Sauté the seitan (or veggie beef) strips in a little oil and 1/2 of the fajita seasoning packet. Cook until the strips are a little crispy and covered with seasoning. Remove the strips and set aside.
2. In the same skillet, add a little more oil and sauté the onion, mushrooms, and peppers with the remaining Fajita seasoning. Cook until the peppers are slightly softened.
3. In a small bowl, combine the black beans and the sweet corn chili salsa. You are now ready to make the fajitas.
4. Layer the ingredients (from the bottom) on the tortillas as follows:
Seitan or Beef Strips
Onion/mushroom/pepper mixture
Beans (about 1 tablespoon)
Salsa (about 1 tablesoon)
Cilantro (about ½ tablespoon)
Green onions and guacamole (optional)
HOMEMADE SALSA AND GUACAMOLE
3 medium tomatoes, diced
1 bulb garlic, chopped
2 green onions, chopped
1 cup cilantro, washed and packed tightly
juice of 1 lime
1 tablespoon Mexican Seasoning or Simply Organic® Salsa Mix
2 tablespoons Simply Organic® Mole Sauce Mix
¼ tsp sea salt
¼ teaspoon ground cumin
dash of ground cayenne pepper (optional)
Combine all the ingredients in a food processor or Blender. For guacamole, mash 4 ripe avocados and mix in juice of 1 lime, salsa, and salt to taste.

1.5 lbs of skirt steak (flap meat or flank steak)
Veggies
3 bell peppers (green, red, orange)
1/2 medium white onion
Marinade
1/4 cup olive oil
3 TBSP Woshtiser sauce
2 TBSP red wine vinegar
1/4 cup lime juice
2 tsp honey
3 garlic cloves, grated
1 TBSP dijon mustard
1 tsp ancho chile powder
1 tsp onion powder
1/2 tsp cumin, ground
1/2 tsp Mexican dry oregano
1/2 tsp ground black pepper
1 tsp kosher salt + salt to taste
