How To make Simply Sensational Cheesecake
1 1/4 c Graham cracker crumbs
1/4 c Sugar
1/3 c Butter or margarine
Melted 1 cn Sweetened condensed milk
3 lg Eggs
1/4 c Lemon juice
8 oz Sour cream :
room
Temperature 2 8oz cream cheese-softened
Preheat oven to 300 degrees. Combine crumbs, sugar and margarine; Press firmly on bottom of 9-inch spring form pan. In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs and lemon juice; mix well. Pour into prepared pan. Bake 50 to 55 minutes or until center is set; top with sour cream. Bake 5 minutes longer. Cool. Chill. Just before serving, remove side of springform pan. Top with strawberries. Refrigerate leftovers. Recipe By : Favorite Brand Name Cookbook -----

No Bake Fruit Cheesecake
No bake fruit cheesecake is simply divine. Made with a simple combination of cream cheese, mild cheddar cheese, whipped cream, sugar, fruit cocktail, and a Graham crust, it doesn't get much easier. You can make the Graham crust from scratch or simply buy it in the grocery store. I whip up the cream, but Cool Whip can be used instead. In this recipe, we add a bit of sugar to make it sweeter, but it can be left out if you're diet conscious. Regular cream cheese can be used, but I like to use the strawberry flavor to give the dish more of a fruity flavor. Believe me, the entire family will love this. ingredients:
egg whites - 8 pieces
yolks - 8 pieces
sugar - 250 g (8.8 oz)
vanilla-flavored pudding powder - 120 g (4.23 oz)
cheese cream - 1 kg (2.2 lb)
butter - 200 g (7 oz)
milk - 350 ml (11.83 fl oz)
biscuits - 400 g (14 oz)
dark chocolate - 300 g (10.6 oz)
hot cream - 250 ml (8.45 fl oz)
coconut flakes - 30 g (1 oz)
Tray size 25 cm x 25 cm (10 in x 10 in)
IN THE OVEN 160 °C (320 °F)/ 1 HOUR

This dreamy no bake no sugar Strawberry Cheesecake has a light and creamy filling is absolutely sensational and tastes just like strawberry ice cream. Absolutely addictive! Check out the recipe below ????
For the Crust:
Oreo biscuit - 200 Grams
Butter 60 Grams
For the Strawberry Coulis:
Strawberry - 450 Grams
Lemon juice - 3 Tbsp
Gelatin - 2 ¼ Tsp
Stevia - 3 Tsp
Corn starch: 2 ½ Tbsp
For the Filling:
Cream cheese - 600 Grams
Stevia – 2.5 Tsp
Vanilla – 1 Tsp
Whipping Cream (chilled) – 300 ml
Method:
For the Crust:
Grind the Oreo biscuit into a fine mixture. To this add melted butter and mix well until its combined well. Pour the mix into a springform pan and press tightly and spread evenly. Freeze this crust for 30 minutes.
For the Strawberry Coulis:
Add lemon juice and gelatin into a bowl, mix well and keep aside for 5 minutes for the gelatin to bloom.
Cut the strawberries into chunks and blend into a thick puree. Pour this into a small pot along with the bloomed gelatin, corn starch and stevia (or any sweetener of your choice).Cook on medium flame until the coulis thickens. Whisk continuously. Once done set aside to cool to room temperature before using.
For the Filling:
Add cream cheese into a bowl and whisk until fluffy. Next add in vanilla extract and stevia and mix well. Then add in the cooled strawberry coulis into the mixture little by little. Mix everything well.
In another bowl pour chilled Whipping cream and whisk until soft peaks form.
Next add the whipped cream into the cream cheese mixture and mix well.
The filling is now ready.
Pour the filling in the previously prepared base. Spread evenly and shake the pan so that it settles well.
Chill the cheesecake in the fridge overnight or until it fully sets. Once fully set, remove the springform pan and transfer cheesecake onto a serving plate.

250gms of plain digestive biscuits
150gms of melted butter
500gms of cream cheese
170gms of castor sugar
250gms lemon zest
juice of whole lemon
3 whisked eggs
Method:
-Grind 250gms of plain digestive biscuits
-Add melted butter to the powdered digestive biscuits
-Place the foil in tin and grease it with butter
-Place the mixture in the bottom of the tin
-Let it chill in refrigerator for 15 minutes
-In a bowl put cream cheese, castor sugar, lemon zest, juice of lemon and whisk it all together
-Add whisked egg and continue whisking
-Pour the filling onto the base of biscuit
-Place the cake in oven for 50-60 minutes at160-180 degree Celsius
-Let it cool down and then refrigerate it for few hours
- Dust some icing sugar over the top of cake
-Lemon Cheesecake is ready to be serve.

50g (3 tbsp) butter, melted
160 g (19) biscuits
200 g (1 cup) cream cheese
160 g (1 cup) cookie paste
200 ml (¾ cup) full-fat cream
5 ml (1 tsp) vanilla extract
extra cookies, paste for decor
METHOD
1. Blitz cookies with a blender or coffee grinder until fine crumbs form.
2. Mix crumbs with melted butter.
3. Line 9 cupcake cups with paper liners and place 1 heaping tablespoon of the crumbled cookies in. Press with a glass.
4. In one bowl whip cream cheese with cookie paste and vanilla.
5. In another bowl whip cream until stiff peaks form. Mix the cream into the cheesecake filling.
6. Pour filling on top of the crumb cake layer and chill mini cheesecakes in the freezer for 30 minutes.
