1 1/2 Tbsp (30ml) - Olive Oil
1.5kg (3.3lbs) - Beef Chuck, Large Diced
2 - Brown (Yellow) Onions, Large Diced
6 - Shallots, Halved & Peeled (Substitute With Onion)
4 - Garlic Cloves, Roughly Chopped
2 tsp (5g) - Ground Cumin
130g (4.5oz) - Concentrated Tomato Paste
160ml (160g) - Red Wine (See Alcohol Notes Below)
60ml (1/4 Cup) - Red Wine Vinegar
550ml (550g) - Chicken or Beef Stock or Water
2 - Cinnamon Sticks
10 - Whole Cloves
4 - Dried Bay Leaves
7g (0.25oz) - Fresh Oregano
90g (3.1oz) - Dried Currants (Optional)
Seasoning To Taste
Recipe Notes -
If you can't consume alcohol, substitute the red wine for beef or chicken stock.
If you wish to not use fresh oregano, dried can be used instead. Use 1 1/2 tsp (1.5g).
Dried Currants are optional.
Shallots can be substituted with regular brown (yellow) onions. Use 2 extra onions.

1 Whole Chicken, cut into pieces, about 4½ lbs (2Kg)
¼ cup Fresh Parsley, chopped
4 Cloves Fresh Garlic, sliced
Olive Oil
2 Carrots, large chunks
2 Yams (Sweet Potatoes), quartered lengthwise
3 Idaho Potatoes, quartered lengthwise
2 tsp Oregano
1/3 cup Pecorino Romano Cheese, grated
Salt & Pepper to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.

In today's video, I share you with a family traditional Italian ???????? Stew. It is such comfort food, so delicious and warm.
Ingredients:
1 pack (500g) stew beef or veal
1 can diced tomaotoes
1 onion
4-5 garlic cloves
2-3 sweet bell peppers (any colour)
1 pack of mushrooms
4-5 white potaotes
1/2 can of water
2 tsp of garlic powder, and parsley flakes
salt and pepper to taste

Our Grandma’s Italian Sunday Gravy - Made with Love
Sunday Gravy, our ultimate comfort food! Our Grandma’s Italian Sunday gravy recipe was passed down to our mother, and now us, since we love to cook so much. Our Sunday sauce is made with beef Braciole, Mild Italian Sausage, Pork Ribs, and our homemade Meatballs inside. Braciole is a tenderized eye-round beef roll, seasoned with Italian spices, such as fresh garlic, parmesan cheese, parsley, salt, and pepper, and then tied up to keep in place. The braised meats add that traditional flavor to the Sunday sauce, that will melt in your mouth.
This delicious Italian feast is fit for a king! The process of putting together this Italian stable is well worth the time. You can use any type of pasta with this gravy, and it goes great with a nice salad and Italian bread.
Be sure to keep the family at bay while the sauce is cooking. The aroma will drive them crazy while waiting to eat!

Braciole Recipe:
• 3 6-8 oz. eye-round steaks (tenderized)
• 3 teaspoons of grated Parmesan cheese
• 3 teaspoons of Italian parsley Salt and pepper to taste
LINK TO MEATBALL RECIPE:
Gravy Ingredients:
• 2 6.5 lbs. of whole pair tomato (Pureed in a blender)
• 4 cups of diced onion
• 1 cup of chopped garlic
• 2 cups of olive oil
• 2 cups of fresh basil leaves
• 1/2 cup of Parmesan cheese
• Salt & pepper to taste
• Rack of Pork Ribs
• 1 lbs. of Italian Sausage (mild or hot)
• 10 Meatballs
• 2 Braciole
Instructions:
1. Prepare the Braciole, Sausage, Ribs & Meatballs.
2. In a 12 qt. pot on med-high heat, add 1/2 cup of olive oil.
3. Add the Braciole and Sausage and sear on all sides.
4. Remove the meat and then add 1 & 1/2 cups of olive oil, dice onion and garlic and fresh basil. Cook until golden brown.
5. Add tomato, Parmesan, salt and pepper.
6. Add all the cooked meat into the pot of sauce continue cooking until the sauce come to a light boil.
7. Reduce heat and continue cooking for 3 hours (Frequently Stirring.
8. Cook your favorite pasta and enjoy.
