Best Seafood Pasta with lobster, shrimp, scallops and crab.
This is a family favourite. This is a wonderful seafood pappardelle dish. Ingredients:
1 cup of boursin cheese, 1 cup of heavy cream, 1 pack of pappardelle pasta, 5-6 thinly sliced shallots, 1 whole red chilli, 2 cups of tomato sauce, 3 tablespoons of olive oil, 6-8 lobster tails, 6 shrimp, 4 scallops, 4 crushed garlic gloves, half cup brandy or cognac, 1 cup crab meat, 4 tablespoons of butter.

1lb Linguine
1/4 cup Olive oil
10 Cloves Garlic Sliced
28oz can of peeled San Marzano Tomatoes Crushed by hand
Basil
Crushed Red Pepper
Salt & Pepper
Shrimp & Scallop Fraiche - Blast From The Past

Ingredients:
Shrimp and Scallop
1 tablespoon cognac or wine
3 cloves minced garlic
1 juiced lemon
1/2 stick butter
1 lb fresh sea scallops
1 lb cleaned, peeled, and deveined shrimp
1/2 cup recipe as follows creme fraiche
1 tablespoon cornstarch
2 tablespoons or chicken stock fish stock
4 sprigs fresh basil
1 cup heavy cream
2 tablespoons sour cream
Preparation:
Shrimp and Scallop
1. Prepare creme fraiche ahead of time by combining heavy cream and sour cream
2. Cover with plastic wrap and let stand at room temperature for 12-24 hours
3. Clean, peel and devein shrimp, leaving tails on
4. Pat scallops dry with paper towels and season with salt and pepper
5. Melt butter in a large skillet. Add lemon juice and garlic
6. Place shrimp and scallops in butter and sauté until scallops are opaque, 3-4 minutes per side
7. Remove to a warm platter. Add cognac or wine to pan juice
8. Dissolve cornstarch in stock and add along with creme fraiche to pan
9. Simmer until thickened
10. Pour sauce over shellfish and garnish with basil sprigs

Scallops with Creamy Shallot Sauce - Best Sauce for Scallops
Today we are making a pan seared scallop dish with an easy and creamy sauce with shallots and tarragon. The sauce is prepared with reduced white wine and cream and packed full with flavors and pairs perfectly with seared scallops. In this recipe, I'm using smaller bay scallops which take less time to cook compared to great scallops, but they are absolutely sweeter.
I've used a carbon steel pan to sear the scallops, if you are using a teflon pan, add 20 or more seconds to the searing time!

• 5-6 scallops
• 1/2 cup heavy cream
• 1/2 cup white wine
• 2 shallots (finely sliced)
• 2 tsp tarragon (finely chopped)
• 100 g butter (unsalted, cold), + 1 tbsp for the scallops

• Salt to taste
• 1 tbsp of rapeseed or canola oil
• 1 tsp chopped chives to garnish
• ½ tsp lime zest to garnish

EASY SHRIMP SCAMPI WITH COGNAC
Easy Shrimp scampi with cognac is my dad’s creation and it’s an easy and quick seafood starter full of flavors. So, let’s see what we need to make shrimps scampi with cognac.
Ingredients:
Extra virgin olive oil
Cognac
A glass of white wine
Fresh parsley
Beautiful cherry tomatoes
Rosemary
Onion
Chilli if you like it
1Kg – 35 oz of Fresh Shrimps
Method:
So, now you put a nice amount of extra virgin olive oil in the pan. When the oil is nice and warm, you put half onion that you cut into small pieces.
And now, you put the cherry tomatoes, we are using about 12 of them. Now it’s time to put some nice rosemary inside, just to give that beautiful taste to the sauce.
I think now it’s time to put the shrimp scampi inside and a glass of white wine.
Because we are using one kilo of shrimps, we’re going to add 50 ml of cognac. The cognac will give the nice taste to it.
Now, we need to cover this for about five minutes, but you can’t open it all. It has to be nice and locked.
After 5 minutes, we are ready to open it. And here we have an explosion of aromas. And explosion of flavors of the Adriatic Sea.
And now it’s time to serve this easy shrimp scampi with cognac made by my Dad.
