Cheesy Cajun Shrimp and Rice Casserole
1/4 cup butter
1/3 cup finely diced shallots
3 teaspoons Cajun seasoning, divided
1 pound large shrimp, deveined and peeled (41/50)
1/4 cup all-purpose flour
2 cups whole milk
12 oz shredded pepper jack cheese
4 oz shredded Gruyere cheese
4 oz shredded Parmigiano-Reggiano
1/2 teaspoon cayenne pepper
1 can (15.5 oz) chili beans, drained
4-1/2 cups cooked long-grain rice
1 jar (2 oz) pimentos, drained
3 Tablespoons butter, melted
1/2 cup Panko bread crumbs
1.) Preheat oven to 375 degrees F. In a large, deep, nonstick skillet, melt 1/4 cup butter over medium heat. Saute shallots and 1 teaspoon of Cajun seasoning until softened, about 2 minutes. Add shrimp and cook until just pink, about another two minutes. Add flour and stir until fully incorporated.
2.) Slowly add milk, stirring constantly, breaking up any little lumps. Bring to a slight boil and cook for one minute
3.) Slowly add all three cheeses, stirring and making sure they are fully incorporated. Stir in remaining 2 teaspoons Cajun seasoning, cayenne, chili beans, rice and pimentos. Pour into a 2-quart casserole dish.
4.) Melt 3 Tablespoons butter and mix with Panko bread crumbs. Sprinkle over the top. Bake for 20 minutes.
Shrimp and Rice One Pot Meal
RECIPE: Lodge Pan in this video: Hi Guys, today I'll show you How to Make Shrimp and Rice with Peas in One Pot for a quick, weeknight dinner. Very simple ingredients make this dish easy to put together.
Use dry measuring cup to measure rice. Use a liquid measuring cup to measure stock. Rinse rice with cool water until water is clear. Drain well and set aside.
Peel and devein shrimp. Wash and pat dry. Add salt, ground black pepper and garlic powder. Mix well.
Heat olive oil in a wide pan. Add shrimp in one layer. Cook 2 minutes on one side for large shrimp. Turn over and cook 2 minutes on the other side. Remove shrimp with slotted spoon and set aside. If using smaller shrimp, cook for less time. Do not overcook shrimp.
To remaining oil in pan, add chopped onions and sauté until soft. Add chopped garlic and cook for a minute. Add well drained rice and sauté for 4 minutes stirring frequently to toast rice. Add chicken stock, salt and ground black pepper. Stir and cover pot. Bring to a boil. Then turn down heat to medium low and cook for 11 minutes covered. Then, add thawed green peas, shrimp with any accumulated juices, lime juice and butter. Mix and cover. Cook 2 to 3 more minutes until rice is done. Stir in chopped cilantro. Serve with lime wedges to squeeze over dish. Indian Mint Chutney also goes well with this rice dish.

Welcome to Cooking with Philly, our new cooking series, giving you some great recipes to try. Today we have an easy Shrimp and Wild Rice Casserole for you to try this #hungryhumpday
Ingredients:
-1 cup of wild rice
-1 pound Philly's Texas Shrimp
-2 tbs butter
-1/2 green bell pepper, seeded and chopped
-1/2 onion, chopped
-1 cup mushrooms, thinly sliced
-1 can of cream of mushroom soup
-2 cups grated sharp cheddar
-Salt and pepper to taste
Directions:
Preheat oven to 325 degrees F.
Cook the wild rice according to package directions. Set aside to cool. Bring 2 cups water and 1/2 tbs salt to boil in a medium saucepan and cook the shrimp for 1 minute. Drain immediately and set aside.
Melt butter in a medium saucepan and saute the pepper, onion, and mushroom until soft, about 5 minutes.
In a large bowl, combine wild rice, cream of mushroom, and cheddar cheese, shrimp, and vegetables. Add salt and pepper to taste. Mix well. Spray an 11x7 glass casserole dish with vegetable spray. Place the mixture in the pan. Bake for 30 minutes, until bubbly.
