1 lb Medium shrimp
- completely shelled, - tails removed, - cleaned and blotted dry
MARINADE:
1 Egg white; lightly beaten
1 ts Cornstarch
1 1/2 c Peanut oil for deep-frying
SAUCE:
1/2 lb Pork, coarsely ground
2 tb Peanut oil
1 1/2 tb Chinese fermented blk. beans
2 tb Coarsely chopped garlic
1 ts Finely chopped ginger root
2 Scallions; finely chopped
1 1/2 tb Thin soy sauce
2 tb Chinese rice wine
-=OR=- Dry sherry 1/4 ts Sugar
1 pn Salt
1/2 c Chicken broth
1 tb Cornstarch; dissolved in
2 tb Chicken broth; (cold)
1 Egg; beaten with
2 ts Sesame oil
MARINATE THE SHRIMP in the egg white and cornstarch for 20 minutes in the refrigerator. Fry the shrimp in 1 1/2 cups oil at a moderate temperature (325F). Or,
to simplify, stir-fry them in a wok in 3 tablespoons of oil just until they turn opaque. Remove them from the wok. Brown the ground pork in 2 tablespoons of oil. Add the rest of the sauce ingredients. Bring them to a boil and add the cornstarch to thicken the sauce lightly. Turn off the heat. Stir in the beaten egg, pulling the clumps of egg into thin strands with chopsticks as they cook. Stir in the cooked shrimp to coat them with the sauce. -----

Shrimp with Lobster Sauce - Lobster sauce is a type of sauce used in American-Chinese and Canadian-Chinese cuisine. It is also sometimes found in Polynesian-influenced Chinese food.[citation needed] It is a type of white sauce within Chinese cooking, meaning that it is of a mild flavor, and based on meat stock, as opposed to soy sauce. Lobster sauce is most commonly used as a sauce for the dish Shrimp with Lobster Sauce (Chinese: 蝦龍糊).
The sauce itself does not contain any lobster, and may vary in preparation method from place to place or restaurant to restaurant. However, it will typically contain chicken broth, garlic, ginger, fermented black beans, and eggs, and is thickened with cornstarch. Some recipes incorporate ground pork and soy sauce. The color varies from being pale white, to a yellow, mainly depending on how the eggs are incorporated into the sauce; if the eggs are added quickly, the sauce acquires a yellow hue. The exception, lobster sauce in most of New England, where it is a thicker brown sauce.
It may have been named lobster sauce due to the fact that it derives from a similar family of sauces used in Cantonese cuisine that were traditionally poured over stir-fried lobster. Neither the recipe nor the sauce exist in China or in Chinese communities in Asia, and is considered to be an example of Overseas Chinese food

Where is the lobster? you may ask. But no lobster is being used in this dish. Have you checked the lobster price lately? This dish was conceived many years ago in the U.S. to mimic Southern China and Hong Kong way of cooking their lobster. The same seasoning mixture was used but is quite affordable when lobster is not being used! We used to serve a ton of this dish back when we still operated the Dragon House. Now the secret family recipe is finally revealed!!!
Shrimp in Lobster Sauce Recipe
Ingredients:
1/2 # (227g) Jumbo shrimp (21-25 count peeled and deveined)
1/4 # (113g) Ground pork
2 Slices fresh ginger (crushed or minced)
3 Cloves garlic (crushed or minced)
1-1/2 to 2 Cups (355 to 473ml) Soup /chicken stock
1 Tablespoon (14ml) Oyster sauce
1 Teaspoon (0.5ml) Sugar
1/2 to 1 Teaspoon (0.25 to 0.5ml) Salt
1 Tablespoon (14ml) Black bean paste (recipe:
1/4 to 1/2 Teaspoon (1.25 to 2.5ml) Dark soy sauce
Dash White pepper powder
1/8 Teaspoon (0.62ml) Sesame oil
1 Egg
Corn starch
Optional: Green onions, green peas, water chestnuts or whatever you'd like
Directions:
1. Marinate shrimp with 1 (0.5ml) teaspoon light soy sauce, 1 (0.5ml) teaspoon rice wine, dash white pepper powder, 1/2 tablespoon (7ml) corn starch and 1/2 teaspoon (7ml) vegetable oil for 2 hours in frig or overnight.
2. Heat wok and add 1/2 tablespoon (7ml) oil.
3. Put in shrimp and cook till half done (for 30 to 45 seconds) and take out.
4. Put more oil in and ginger and garlic. Cook for a minute.
5. Add in pork and cook for another 3-4 minutes.
6. Add in soup stock.
7.Add in salt, sugar, white pepper powder, oyster sauce, dark soy, sesame oil and black bean paste.
8. Add in shrimp and green peas. Bring to a boil.
9. Thicken sauce with corn starch and water mixture.
10. Scramble egg and drizzle on top.
11. Top with green onion (optional).
12. Serve with rice.

Easy Shrimp in Lobster Sauce #takeout

About 1 lb of shrimp
1/4 tsp grated ginger
1 tsp grated garlic
1 to 2 small carrots chopped up in small bits
1 large green onion
1/4 tsp salt
1/4 tsp white pepper
1 and 1/2 cups water
1/2 chicken bullion cube
( or 1 and 1/2 cups of chicken stock)
1/3 cup of frozen sweet peas
1/2 tbsp of low sodium soy sauce
1 tsp of granulated sugar
1 large egg white
2 tbsp corn starch
1/4 cup water
1 tsp sesame seed oil
Shrimp and Lobster Sauce does not actually have any lobster in it. However you can add chunks of crab or lobster if you'd like.
