আজকের পর্বে আপনাদের জন্য আমার আয়োজন অল্প উপকরণে চুলায় তৈরী চিকেন সাসলিক রেসিপি | Chicken Shashlik Recipe,Chicken Shish Kabab for iftar
উপকরণঃ
হাড়ছাড়া মুরগির মাংস - দেড় কাপ, কিউব করে কাটা
বেকিং সোডা - ১ চিমটি
লেবুর রস - ১/২ টেবিল চামচ
লবন - ১/৪ চা চামচ
সয়া সস - ১/২ টেবিল চামচ
টমেটো ক্যাচাপ - দেড় টেবিল চামচ
আদা-রসুন বাটা - ১/২ টেবিল চামচ
ধনে গুঁড়া - ১/২ চা চামচ
মরিচ গুঁড়া - ১ চা চামচ
গোলমরিচ গুঁড়া - ১/৪ চা চামচ
তেল/বাটার /ঘি - ১/২ টেবিল চামচ
ক্যাপসিকাম, পেঁয়াজ, টমেটো - কিউব করে কাটা, প্রয়োজন মত।
সাথে একটু লেবুর রস, লবন, গোলমরিচ গুঁড়ো ও তেল দিয়ে মেখে নিতে হবে।
ভাজার সময় তাওয়া /প্যান গ্রীজ করে নেয়ার জন্য সামান্য তেল/ঘি ও বাটার লাগবে।

Paneer Shashlik ASMR COOKING:--
INGREDIENTS :-
Paneer Cubes - 200 grms
(1/2 inch Thickness),
1 Onion medium size Cubes,
1 Capsicum Cubes,
2 Tomato Cubes,
3 tbsp Hung Curd (100grms),
1 tbsp Corn Flour,
1/2 tsp Ginger powder,
1/2 tsp Garlic powder,
1 tbsp Fresh Cream,
1/2 Lemon Juice,
1/2 tsp Pepper powder,
1/2 tsp Cumin powder,
1 tsp Chilly powder,
1/4 tsp Turmeric powder,
1 tsp Coriander powder,
1tbsp Mustard Oil,
Salt as Taste,
Soak 15 mins,
Satay Sticks or toothpicks,
Baking Process:-
- Preheat the Oven at 180 C for 2 mins,
- Grease the basket wit Oil,
- Thread the paneer and Vegetables onto the sticks and cook at 170 C for 10 -12 mins..

Ingredients:
-Prawns (Jheenge) 350g
-Tomato ketchup ¾ Cup
-Soy sauce 2 tbs
-Chilli sauce 4 tbs
-Sirka (Vinegar) 1 tbs
-Himalayan pink salt ¼ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Cornflour ½ tbs
-Water 1 Cup
-Tamatar (Tomato) deseed & cubes 2 medium
-Shimla mirch (Capsicum) cubes 2 medium
-Pyaz (Onion) cubes 1 large
-Himalayan pink salt ½ tsp or to taste
-Lal mirch (Red chilli) crushed 1 & ½ tsp
-Soy sauce 1 tbs
-Dark soy sauce 1 tsp
-Cooking oil 3 tbs
-Cooking oil 2 tbs
-Adrak (Ginger) chopped 1 tsp
-Lehsan (Garlic) chopped 1 tbs
Directions:
How to clean Prawns?
-Remove head,legs,outer shell & tail of prawn.Make a slit with the help of knife & devein it.
-Wash thoroughly with water & set aside.
-In a small jug,add tomato ketchup,soy sauce,chilli sauce,vinegar,pink salt,red chilli powder, cornflour,water,whisk well & set aside.
-In a bowl,add prawns,tomatoes,capsicum,onion,pink salt,red chilli crushed,soy sauce & dark soy sauce,mix well & skew on wooden skewers.
-In a frying pan,add cooking oil & fry skewers on low flame until golden (2-3 minutes each side) (makes 12-14).
-In a frying pan,add cooking oil,giner,garlic & sauté for a minute.
-Add prepared sauce,mix well & cook for 1-2 minutes.
-Add prawn skewers,drizzle sauce over it & serve!

-Bowl mein prawns,tamatar,shimla mirch,pyaz,pink salt,lal mirch crushed,soy sauce aur dark soy sauce dal ker ache tarhan mix karein aur wooden skewers per laga lein.
-Frying pan mein cooking oil dal dein aur skewers ko golden ho janay tak halki ancch per fry ker lein golden (2-3 minutes each side) (makes 12-14).
-Frying pan mein cooking oil,adrak aur lehsan dal ker ek minute kliya sauté ker lein.
-Tayyar sauce dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein
-Prawn skewers dal ker upper sa sauce ko drizzle ker ka serve karein!

Chicken Shashlik with Gravy
Recipe in English:
Ingredients:
-Soy sauce 2 tbs
-Sirka (Vinegar) 1 tbs
-Kali mirch powder (Black pepper powder) 1 & ½ tsp
-Namak (Salt) ½ tsp or to taste
-Paprika powder ½ tbs
-Cheeni (Sugar) 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Chicken boneless cubes ½ kg
-Oil 1-2 tbs
-Shimla mirch (Capsicum) cubes 1 medium
-Tamatar (Tomato) deseeded & cubes 2 medium
-Pyaz (Onion) cubes 1 medium
-Boiling water (Pani) as required
-Tamatar (Tomatoes) 3 medium
-Oil 1 tbs
-Lehsan (Garlic) crushed 1 tbs
-Tomato ketchup 2-3 tbs
-Hot sauce 2 tbs
-Soy sauce 1 & ½ tbs
-Sirka (Vinegar) 1 tbs
-Cheeni (Sugar) 2 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Namak (Salt) ½ tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
-Lal mirch (Red chili) crushed ½ tbs
-Chicken stock 1 Cup or as required
-Corn flour 1 tbs
Directions:
-In bowl,add soy sauce,vinegar,black pepper powder,salt,paprika powder,sugar,ginger garlic paste and mix well.
-Add chicken boneless cubes,mix well and marinate for 30 minutes.
-In pot,add oil,marinated chicken and mix well.
-Cover and cook for 3-4 minutes then cook on high flame until dry.
-Add capsicum,tomato,onion and mix well for 1-2 minutes and take out in a bowl & set aside.
-Cut tomatoes slightly with the help of the knife.
-In boiling water,add tomatoes and blanch for 2 minutes and take out in a bowl.
-Peel off the skin and cut roughly & let them cool.
-In grinder,add tomatoes,grind well & set aside.
-In the same pot,add oil,garlic and mix well.
-Add grinded tomatoes,tomato ketchup,hot sauce,soy sauce,vinegar,sugar,white pepper powder,salt, black pepper powder,red chili crushed and mix well.
-Cover and cook on low flame for 2-3 minutes.
-In chicken stock,add corn flour and whisk well.
-Add it in pot,mix continuously and cook until desired consistency.
-Add cooked chicken & vegetables,mix well and simmer for 1-2 minutes.
-Serve with rice.

-Chicken boneless cubes dal ker ache tarhan mix karein aur 30 minutes kliya marinate ker lein.
-Pot mein oil aur marinated chicken dal ker ache tarhan mix ker lein.
-Dhak dein aur 3-4 minutes kliya paka lein phir tez ancch per dry ho janay tak paka lein.
-Shimla mirch,tamatar aur pyaz dal ker 1-2 minutes kliya ache tarhan mix karein aur bowl mein nikal ker side per rakh dein.
-Tamatar mein knife ki madad sa slightly cut laga lein.
-Ubaltay hoye pani mein tamatar dal ker 2 minutes kliya blanch karein aur bowl mein nikal lein.
-Skin ko nikal ker roughly chop ker lein & thanda ker lein.
-Grinder mein tamatar dal ker ache tarhan grind ker lein & side per rakh dein.
-Us he pot mein oil aur lehsan dal ker ache tarhan mix ker lein.
-Grinded tamatar,tomato ketchup,hot sauce,soy sauce,sirka,cheeni,safed mirch powder,namak,kali mirch powder aur lal mirch crushed dal ker ache tarhan mix ker lein.
-Dhak dein aur halki ancch per 2-3 minutes kliya paka lein
-Chicken stock mein corn flour dal ker ache tarhan whisk ker lein.
-Pot mein dal dein aur musalsal mix kertay rahien aur desired consistency anay tak paka lein.
-Cooked chicken & vegetables dal ker ache tarhan mix karein aur 1-2 minutes kliya simmer ker lein.
-Chawal ka saath serve karein.
