3 lb Lean stew meat
1 lb Pork loin; ground
2 tb Pure lard or shortening
3 lg Yellow onions; chopped
2 ts Salt
5 Jalapenos; fresh/seeded
1 lb Tomatotes; red ripe

-red one) 2 ts Cumin seeds
2 Dried japanese chiles
-- little skinny red ones 1 ts Ground cumin
1 ts Sugar
7 cl Garlic
1 cn Tecate beer
1 tb Ground chiles pasillas
1 Unsweetened chocolate; (1
-oz) 1 ts Crushed chilies quebardos
-(pequins) 1 qt Water
1/2 Cuo masa harina
1 ts Tabasco sauce
This recipe is a lot of trouble and is recommended only for genuine chili fanatics.

1 cup white vinegar
1 cup water
1 tablespoon pickling salt
1 clove garlic smashed (or more as desired)
1 tablespoon honey

KETCHUP MADE FROM 100% CHILI PEPPERS! - Malaysian Style Chili Ketchup Recipe (Better Than Tomatoes!)
Ep 558 Chili Ketchup

RECIPE?
1 cup chopped red chilies (low to medium heat)
1/4 cup tamarind paste
4 Tb brown sugar
1/4 cider vinegar
2 cloves garlic
1/4 small red onion (leave out to be more like Malaysian chili sauce)
1 tsp salt
1 clove, ground
Do this:
1. cook onions, garlic and chili in a little oil until translucent
3. add spices, cook for a couple minutes
4. Mix tamarind paste with water and break it up to combine.
5. Add vinegar and tamarind into pot (use strainer to filter out any seeds/membrane)
6. cook for 20-30 minutes, add a splash of water if too dry, maintain a ketchup like consistency
7. blend mixture
8. Count 10 Missippis while hopping on one foot (be careful, the ketchup is hot)
9. pass mixture through a sieve using a rubber spatula (or use a food mill if you have one) add water if the mixture is too thick.
10. Fix mistakes: Taste the ketchup.
a) If its not sweet/salty enough: add more sugar/salt
b) If it's too sweet/salty: throw it out the window of a speeding car and try again
c) If If its too thick: thin out with a little water.
d) If its too thin: boil off some of the liquid.
Keep in mind that the ketchup will thicken a little when chilled. Flavors also may mellow out a bit.
11. store in fridge to chill.

The sting will stay on your hands if you don’t wash them and any other part of your body you touch will feel it. Better still put on a pair of gloves before touching scotch bonnet pepper.”

Chopped pepper chili sauce with garlics (duojiao) authentic Hunan recipe #1 湖南剁椒醬
Chopped pepper chili sauce (or called duojiao) is from Hunan province in China. It's the main ingredient for many world famous Chinese spicy dishes: duojiao steamed fish head, duojiao steamed rips. It's perfect for steaming, but also stir fry or simply mixing it in your noodle soup or Chinese salad.
I was searching for it in Germany for a long while, but unable to locate any. Apparently they are also quite expensive in China. This seasoned & fermented chili sauce will be your next secret weapon for making authentic Chinese spicy food.
