GARLIC GUAJILLO STEAK BOWL | CHIPOTLE COPYCAT RECIPE
Easy to make garlic guajillo steak on the grill or griddle. Tenderized flank steak marinated in a simple lemon, garlic and oil marinade then seasoned generously with a garlic guajillo seasoning. Cooked on a hot griddle then tossed with fresh squeezed lime and fresh cilantro. Served over a bowl of white rice garnished with fresh tomato, scallions and guacamole. Quick and easy mildly spicy Chipotle copycat dish.
Shopping List:
1 1/4 lbs. skirt or flank steak (tenderized)
3/4 cup olive oil
1 1/2 cups lemon juice (about 8 lemons)
Kosher salt and pepper to taste
Garlic guajillo chili powder (seasoning)
1 bushel fresh cilantro
Juice of 1/2 lime
1 tbsp. canola or vegetable oil
White rice
Diced tomatoes
Green onion scallions
Guacamole (optional)
Directions:
Have your butcher tenderize the steak or pound yourself with a meat mallet.
Rub both sides of the steak with the garlic paste
In a suitable dish, add the olive oil and lemon juice with a dash of salt and pepper. Place the steak in the marinade and let sit at room temperature for 1 to 1 1/2 hours.
Remove the steak from the marinade and pat dry then season with the salt and pepper.
Grill or griddle over high heat (400-450F), seasoning generously with the garlic guajillo seasoning. Cook 2-3 minutes each side, depending on the steak's thickness, or until the internal temperature is 125F.
Slice thin and add to a bowl with the fine chopped cilantro. Toss.
Serve over a bowl of white rice, diced tomatoes and scallions with a garnish of guacamole (optional).

This is how you make chipotle flank steak with creamy cilantro sauce. Start by blending 3/4 cup of mayonnaise with the chipotle peppers and adobo sauce and fresh lime juice, using a hand blender. You can also use a food processor if you like. Pour half of the marinade into a baking dish. Put the steak on top and cover it with the rest of the marinade. Cover the dish with plastic wrap and let the steak marinate in the fridge for 30 minutes. If you can't get flank steak, you can use a top round steak instead. While the meat marinades, you can start making the cilantro sauce. Add the remaining mayonnaise and all of the cilantro and garlic salt to a small bowl. Give it all a good stir, and transfer the sauce to a serving bowl. Next, take the steak out of the marinade and cook it on a hot grill or on a grill pan. Turn it over once while it's cooking. It'll need about 4 minutes on each side, depending on how you like your steak. Let your steak rest for 5 minutes on a plate after cooking. This will help it stay more juicy. Then, cut it across the grain into thin slices and serve it with cilantro sauce.

Chipotle-Rubbed Flank Steak with Garlic-Lime Butter
Prep: 15 minutes plus standing Grill: 6 minutes Serves: 4
¼ cup PICS™ Sweet Cream Unsalted Butter, softened
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon PICS™ Garlic Powder
¾ teaspoon kosher salt
¼ teaspoon PICS™ Ground Black Pepper
¼ teaspoon lime zest
2 teaspoons chipotle powder
1 teaspoon PICS™ Dark Brown Sugar
½ teaspoon PICS™ Onion Powder
1 Market 32® Flank Steak (about 1½ pounds)
1 tablespoon PICS™ 100% Pure Olive Oil
1. Prepare outdoor grill for direct grilling over medium-high heat. In small bowl, stir butter, cilantro, lime juice, ½ teaspoon garlic powder, ¼ teaspoon salt, pepper and lime zest. Makes about ¼ cup.
2. In small bowl, whisk chipotle powder, sugar, onion powder, and remaining ½ teaspoon each garlic powder and salt. Brush steak with oil; rub with chipotle powder mixture.
3. Place steak on hot grill rack; cover and cook 6 minutes or until internal temperature reaches 135° for medium-rare, turning once. Transfer steak to cutting board; tent with aluminum foil and let stand 10 minutes. (Internal temperature will rise to 145° upon standing.) Slice steak across the grain; serve topped with Garlic-Lime Butter.

2 pounds flank steak
2 tablespoons vegetable oil
1 chipotle pepper in adobo sauce plus 2 tablespoons adobo sauce
3 garlic cloves
2 tsp salt
1 tbs lime zest
1/2 cup lime juice
1 tsp cilantro
In a food processor combine all ingredients except flank steak. Process until well combined. Marinate flank steak for a minimum of 30 minutes but the longer the better. Grill or pan sear your flank steak (I do about four minutes per side for medium well) let steak rest for 10 minutes then cut thin slices against the grain and enjoy!
