1/2 lb Whitefish, skinned, boned 1/4 lb Salmon, skinned and boned 1/4 lb Shrimps, peeled 2 tb Finely minced onion 1 bn Parsley; stems removed 1/2 ts Salt 1/4 ts Cayenne pepper 1/2 c Egg whites 4 Feet sausage casings CUT THE FISH IN 1-INCH PIECES. Place all ingredients except casings in a food processor and pulse until coarsely chopped. Or, pass all the ingredients through a meat grinder fitted with medium holes. Stuff the mixture into sausage casings or form 2 long sausages in plastic wrap. Poach the sausages in gently simmering water for 5 minutes, drain and let cool. If you have used plastic wrap to form the sausages, remove it when sausages are cool. Cut sausages into 6-inch lengths. To serve, grill the sausages or place under a preheated broiler. Since the sausages are already cooked, we want only to reheat them and crisp their skins. Makes 8 Sausages, or 4 Servings

Ingredients (Grocery List) 1/4 cup butter 12 oz andouille sausage 1lb Ground Pork Sausage (regular or spicy) 1 lb shrimp 1 cup diced onion 1 cup diced celery 1 cup red bell pepper 1 Jalapeno 2 tsp minced garlic 2 tbs tomato paste 2 tsp Worcestershire sauce 4 cups stock (chicken or seafood) 2 cups medium grain rice 10 oz shredded chicken (optional substitution for pork sausage) Cajun seasoning Salt, pepper Green onion Parsley, rosemary, thyme, bay leaf
Directions: Heat Dutch Oven and add ground sausage. Once ground sausage is broken up and starting to brown, add in andouille sausage and half of the butter, cook until completely browned, about 5 minutes. Remove the sausage with a slotted spoon.
Cook and stir onion, celery, and red pepper in the butter remaining in the pot until the onion becomes translucent, 5 to 10 minutes. Stir garlic into the onion mixture; cook and stir together for 1 minute. Add Chicken Base and mix to incorporate with the vegetable mixture; cook and stir another 3 to 5 minutes. (You can add tomato paste here too if you like) Return andouille sausage to the pot along with your ground sausage, Worcestershire sauce, Cajun seasoning, and black pepper; stir to combine. Stir rice into the mixture, then add your chicken stock and bring to a boil. Place a cover on the pot, reduce heat to simmer on medium-low, and cook until the rice is tender, 20-25 minutes. (Important: do not stir the rice too often. If you over-work the rice, it will lose it’s texture and become mushy. Keep the rice off the bottom of the pot occasionally to prevent burning, but do not over-stir the mixture)
Add shrimp at the end. Increase heat to medium-high and cook until the mixture comes to a boil; reduce heat again to medium-low and cook uncovered another 10 minutes, stirring occasionally. Add the remainder of your butter and any additional seasoning, (Cajun and/or cayenne to adjust heat as needed) Garnish with chopped parsley and/or green onion.

This weight loss recipe is inspired by varieties of sausages and the way they are presented. Fish is a loved protein source and have unlimited way to cook and be presented. It’s either fried, grilled, steamed or boiled The fish sausage is made in such away that you have the choice of deciding how you want it to taste by choosing the spices you like. It gives us another way to cook and present fish. In weight loss, fish is an item, depending on how they are presented, boiling, grilling and shallow frying are ideal. Shallow frying has been used for this recipe.
Ingredients: A medium filleted salmon Crashed spring onions Salt Corn flour Chopped coriander 1/2 teaspoonful of pepper cones
Method Blend Salmon to desired texture Turn into a mixing bowl and add spring onions Add coriander and any other herb and mix. Add corn flour, pepper cones and salt. Mix well and wrap in film in pieces and roll each to about 4 inches Put wrapped pieces into boiling water for 5 minutes. Remove into iced water and remove film. Brush a frying pan with olive oil and fry, turning to prevent burning. Serve hot, a condiment for a salad in a weight loss program
