How To make Sauerkraut and Bean Soup
1 Cup Dried Pink Beans
Rinsed
2 Tbsp Freshly Rendered Lard, Bacon Fat :
Or
Oil 1/2 Lb Boneless Pork Butt Diced
3 Cloves Garlic :
Chopped
1 Medium Yellow Onion Chopped
2 Qts Beef Stock
2 Tsp Hungarian Paprika
3 Cups Sauerkraut :
Rinsed And Drained
Salt And Freshly Ground Pepper -- To Taste Garnish 1/2 Cup sour cr
Place the beans in a 6 quart soup pot and add 3 cups of cold water. Cover and bring to a boil. turn off the heat and let sit for 1 hour. In a frying pan, add the lard, grease or oil and brown the pork. Add the garlic and onion; saute until the onion is tender. Drain the beans and return to the pot. Add the pork mixture, beef stock and paprika to the beans. Cover and simmer for 1 hour or until the beans are tender. Using a slotted spoon, remove about 3/4 of the beans to a food processor blender. Add about 1-1/2 cups of the stock left in the bean pot and puree the beans. Return to the pot, adding the sauerkraut. Cover and simmer for 1 hour or until the kraut is very tender. add the salt and pepper, being generous with the pepper. Serve in bowls with a dollop of sour cream.
This sounds very strange but is actually quite good.

5 Bay Leaves
2 TBSP Bacon Drippings, Butter or oil

This Sauerkraut soup is an old Pennsylvania Polish recipe. It is
another unique way to cook with sauerkraut. Tonight I am cooking this sauerkraut soup with chicken. Come for a visit to Tess's Kitchen.
How to make Homemade Sauerkraut Soup
INGREDIENTS:
6 cups chicken broth
2 cups cubed cooked chicken
32 oz of sauerkraut - drained and rinsed
5 medium potatoes cut into bite sizes
1 diced large onion
2 tbsp tomato paste
1 cup diced carrot
1/2 tsp thyme
salt and black pepper
parsley for garnish
In large soup pan add 2 tbsp oil, onions, carrots,
salt and pepper. Stir and cook for 3-5 minutes
until veggies are tender.
Add thyme and tomato paste. Stir and cook for an
additional 2-3 minutes, stirring constantly.
Add chicken broth slowly and stir. Add sauerkraut.
Stir and bring up to a boil, reduce heat to low
and simmer for 30 minutes.
Add potatoes, cover, bring back up to heat and
cook for 20 minutes or until potatoes are done.
Add chicken , stir and cook for 3 minutes just to
heat the chicken. Remove from heat.
***This is typically made with ham hocks.
You can also add kielbasa, smoked sausage or bacon.

Hungarian Bean and Sauerkraut Stew with Ham
Hungarian Bean & Sauerkraut Stew with Ham
(For a 10 Camp Oven)
Ingredients:
1 tbsp. olive oil
2 onions, chopped finely
2 tbsp. paprika
1 tbsp. caraway seeds
4 cups white kidney beans, cooked or canned, rinsed and drained
2 lbs. sauerkraut, drained
1 lb. cooked ham, cubed or chopped if sliced
2 tbsp. fresh dill, minced or 1 tsp. dried dill
Pepper to taste
Directions:
1. Heat oil, using 10 briquettes under the oven wall. Add the onions and cover with lid. Cook for 5 minutes, stirring occasionally to make sure onions are not sticking. Remove from heat and stir in paprika and caraway into the oven.
2. Add ham, beans and sauerkraut, stir to combine mixture and place lid on oven.
3. Place 8 briquettes under the oven wall in an evenly spaced ring and place 8 briquettes on the lid in an even spaced ring. Cook for 30 minutes, stirring a couple of times. Stir in the dill and season to taste with pepper.
4. Serve as is or on top of a bed cooked noodles. Enjoy!!!
