How To make Sauerkraut Ham Balls
1 lb Ground fully cooked ham
1 cn Sauerkraut, drained and
-chopped (16 oz.) 1/4 c Finely chopped onion
3/4 c Plus 2 tb. dry bread crumbs,
- divided 1 pk Cream cheese (3-oz.),
- softened 2 tb Chopped fresh parsley
1 tb Prepared mustard
1/4 ts Garlic powder
1/8 ts Pepper
1/2 c All-purpose flour
2 Eggs
1/4 c Milk
Oil for deep-frying In a large bowl, combine ham, sauerkraut, onion and 2 tb. of the bread crumbs. In another bowl, combine cream cheese, parsley, mustard, garlic powder and pepper; stir into sauerkraut mixture. Chill for at least 1 hour to overnight. Shape intp 3/4-in. balls; coat with flour. In a small bowl, beat eggs and milk. Dip ham balls into the mixture. Then roll in the remaining bread crumbs. Heat oil to 375 in a deep-fat fryer or electric skillet; fry ham balls until golden brown. Drain. Yield: 60 appetizers. Recipe can be made into larger balls and served as a main dish.

Sauerkraut Balls - Game Day Treat
Ingredients:
2 – 14 once cans of your favorite sauerkraut completely drained of liquid
2 cups of your favorite deli ham, I used black forest ham
Run each through the meat grinder or use food processor to grind
Should be a course grind, not paste
Mix in 1 cup of your favorite bread crumbs
Mix well to combine
Form into ball, slightly larger than golf ball sizes
Freeze 1-1 ½ hours
While they are freezing, set up dredge station
3 flat bowls
2-3 beaten eggs in one bowl
Flour in another bowl
Lastly bread crumbs or panko in third bowl
Set up deep fryer with cooking oil heated to 350 degrees
Remove balls from freezer
Roll in flour, shake of excess
Dip in egg, let excess drip off
Roll in crumbs
Repeat until all are coated
Place batch in heated oil
Cook until golden brown all around
Remove to wire rack to cool
Serve while warm with your favorite dip

DIP:
½ TSP lemon juice
1 TBS Worcestershire sauce
½ cup ketchup
1 heaping TSP horseradish
Mix well

These sauerkraut balls are one of my family favorite to serve at Christmas.
Everyone looks forward to me making them. They even ask for a batch to take home as one of their presents!. Plus the dipping sauce.
So its like sauerkraut ball central around Christmas at my house!.
These are easy to make and delicious on their own but the dipping sauce is a major player here.
I hope you consider making these for actually any party, they go fast.
Ingredients:
-1 lb. breakfast roll sausage
-1/2 cup diced onions fine
-2 cups sauerkraut
-4 heaping tbsp. breadcrumbs
-8 oz. cream cheese softened
-3-4 tbsp. chopped parsley
-1/4 tsp. salt
-1/8 tsp. pepper
-1/2 tsp garlic powder
-vegetable oil to fry
(Dredge):
-1 cup of bread crumbs
-1 egg
-1/2 cup milk
-1/2 cup flour
(Dipping sauce):
-3 tbsp. mayo
-1 1/2 tsp hot sauce
-1 1/2 tbsp. stone ground mustard

Sauerkraut Ball Day 2012
These are absolutely the best Sauerkraut balls you will ever taste. as mom would say - a little bit of this and a little bit of that.
2 lb sauerkraut, ground - don’t forget to drain and get as dry as possible
1 can corn beef, ground
2 lbs cooked ham, ground
1 large onion, ground
1 tsp. salt
1 tsp. pepper
Cream Sauce
1 c milk, ¾ cup flour, ¾ c. melted butter
Cook until thickened. Let the cream sauce cool. Mix cream sauce with main ingredients and elt stand in refrigerator for 1 hour minimum. Take 1 teaspoon of cold mix and roll into ball. Roll ball in flour. Dip ball into beaten egg mix. Roll ball in crumbs (Deep fry magic) Deep fry in vegetable oil until balls begin to float in oil. Let cool on paper towel. Balls may be served hot or stored in freezer in a covered aluminum pan. If frozen, bake for 1 hour at 350 degrees.
