How To make Sauerkraut Apple Cake
2 c Flour
2 ts Baking powder
2 ts Ground cinnamon
1 ts Baking soda
1 ts Salt
1/2 ts Ground nutmeg
1 c Sugar
1/2 c Firmly packed brown sugar
4 lg Eggs
1 c Vegetable oil
1 16 oz package sauerkraut; ri
Dry 1 Granny smmith apple, peeled
Dry 1 c Coarsely chopped walnuts or
Cream Cheese frosting Preheat oven to 350F. Line bottoms of two 8 inch round cake pans with waxed paper. Grease and flour pans. Combine flour, baking powder,cinnamon, baking soda, salt and nutmeg in medium sized bowl. Set aside. Mix sugars together in large bowl, breaking up any lumps. Whisk in eggs, then oil, until blended. Stir in sauerkraut, apple and nuts. Add flour mixture and stir just until moistened. Spoon into prepared cake pans. Bake about 35 minutes, or until wooden pick inserted in center comes out clean and cake begins to pull away from sides of pan. Let cool 10 minutes, then invert cakes onto wire racks to cool completely. Spread with cream cheese frosting. ** %%%%% CREAM CHEESE FROSTING %%%%% ** 16 oz cream cheese, softened 1 cup confectioner's sugar 3 1/2 tbsp heavy cream 2 tbsp grated orange zest (peel) 1 tsp cinnamon 2 tsp vanilla Whip cream cheese, slowly adding sugar, until fluffy. Add orange rind,cinnamon and vanilla. Mix well. Makes about 2-1/4 cups. -----

Old-Fashioned Creme Glaze
1/2 cup of powdered sugar
1-3 tablespoons of milk or cream- (depending on thickness of glaze wanted)
Instructions
1-Preheat oven to 350 degrees. Use a 9x5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
2-Mix brown sugar and cinnamon together in a bowl. Set aside.
3-In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.
4-Beat in eggs, 1 at a time, until blended in; add in vanilla extract.
5-Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended.
6-Mix milk into batter until smooth.
7-Pour half the batter into the prepared loaf pan; add half the apples and half the brown sugar/cinnamon mixture.
8-Lightly pat apple mixture into batter.
9-Pour the remaining batter over apple layer and top with remaining apples and brown sugar/cinnamon mixture.
10-Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.
11-Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 60-75 minutes. Really depends on the dish or pan you use. Example: bundt cake pan, round cake pan, loaf pan etc....
12-To make glaze, mix powdered sugar and milk or cream together until well mixed.
• 13-Let cool for about 25-30 minutes before drizzling with glaze.

Here is recipe
Ingredients
1/2 of a 14 ounce can of sauerkraut finely chopped
2 cups 9 ounces all-purpose flour
1/2 cup unsweetened cocoa powder like Hershey’s Dark
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 ounces 1 stick unsalted butter, softened
1 1/2 cups granulated sugar
1 teaspoon vanilla extract
3 large eggs room temperature
1 cup warm brewed coffee
1/2 cup miniature semi-sweet chocolate chips
Frosting
4 tablespoons unsalted butter
6 ounces chopped bittersweet or semisweet chocolate
1/2 cup room temperature sour cream
1 teaspoon vanilla
1/4 teaspoon salt
2 2/3 cup unsifted powdered sugar OR 4 cups 12 oz sifted powdered sugar**
1-2 tablespoons room temperature milk or as needed
Instructions
Preheat the oven to 350F. Spray a 9x13 inch metal cake pan with flour-added baking spray.
Spoon half of the sauerkraut out of the can and into a sieve. Drain well, pat dry, and chop it up on a cutting board or better yet, in a mini chopper or food processor. Save the rest of the sauerkraut for something else.
In a medium size bowl, thoroughly mix the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
In a large mixing bowl using an electric mixer, beat the butter and sugar until creamy. Beat in the vanilla. Scrape the sides of the bowl and beat in the eggs, one by one. add the flour mixture alternately with the coffee, stirring on low speed. Stir in the chopped sauerkraut and the miniature chocolate chips. Fold in.
Pour the cake batter into pan. bake on center rack for 33 to 35 minutes or until a toothpick inserted comes out clean. Let cool in the pan.
When ready to frost, melt the butter in a medium size microwave-safe bowl. Add the chopped chocolate and stir until it is almost fully melted. Microwave at 50% power for another 30 seconds and stir until chocolate is fully melted. Scrape into a large mixing bowl. Stir in the ROOM TEMPERATURE sour cream and vanilla. Add the powdered sugar 1 cup at a time and beat with an electric mixer until smooth and creamy. For thinner frosting, add a little milk. Frost

Sauerkraut Chocolate Cake
Sauerkraut in chocolate cake seems to be an old recipe that our grandmother's generation already baked. I wanted to try it out too. The result is good, you don't taste the sauerkraut, but it gives the cake freshness and crunchiness. If you don't like it crunchy, you can steam the chopped sauerkraut until soft beforehand.

Ingredients:
3 eggs
120g sugar
40g butter
140g cake flour
40g cocoa powder
100g sauerkraut
100g dark chocolate
25ml soy milk
80g marzipan
5g matcha powder
violet flowers
Preparation:
1. Mix the eggs briefly with the sugar.
2. Then continue whisking in the hot water bath until the egg mixture reaches 35°C.
3. Take the egg mixture out of the water bath and continue beating until the mixture has almost turned white.
4. Melt the butter and add it to the egg mixture.
5. Sieve the flour and cocoa powder and add to the batter.
6. Finely chop the sauerkraut and add it.
7. Butter a baking dish and pour the batter into it.
8. Bake for 40 to 45 min at 180°C, depending on the baking tin (mine is 30x10cm).
9. Melt the chocolate with the soy milk and coat the cake with it.
10. Decorate as you like. I shaped little cabbages out of marzipan and painted them green with matcha powder.
