Sate Kambing - Lamb Satay
who doesn't know satay, very well known meat in the skewer throughout south east asia. Let say, Thailand, Malaysia have their own satay recipe. as well as those country, Indonesia also have our own uniqueness satay recipe. from chicken satay, beef , lamb or seafood. I have share chicken satay recipe on my lake brockman video, so for today, I will show you how to cook lamb satay, but this recipe not only for lamb, you can do with other meat also, like beef, chicken or even seafood. I hope you enjoy my recipe and happy cooking!
Ingredients :
500gr lamb meat / daging kambing
1 pcs lemon or lime / lemon atau jeruk nipis
1 tbsp garlic powder / bawang putih bubuk
1 tsp coriander powder / ketumbar bubuk
Olesan (for basting ) :
1 tbsp butter / mentega
3 tbsp sweet soya sauce / kecap manis
(mix well together / aduk sampai merata)
Sambal Kecap (chilli dressing with sweet soya sauce) :
3pcs shallot / bawang merah
2pcs garlic / bawang putih
1pcs tomato / tomat
3pcs keffir lime leave / daun jeruk
5 pcs thai bird chilli / cabe rawit
1/2 pcs lemon/lime
4tbsp sweet soya sauce / kecap manis
2 tbsp soy sauce / kecap asin
(slice all vegetable thinly, mix well with the sauces)
Step by Step :
1. cut the meat lamb into medium cube / potong daging kambing bentuk dadu.
2. season with lemon juice garlic, coriander powder, salt and pepper / bumbui dengan perasan lemon,bawang putih ,ketumbar bubuk, garam dan merica.
3.stick to the skewer and grill / masukan ke tusuk sate lalu dibakar
4.I used charcoal griller, you can use any barbecue griller, oven or on the stove with non stick pan. / saya mengunakan bakaran dengan arang, bisa juga pakai barberque yg biasa, di oven atau pakai kompor dengan menggunakan teflon anti lengket.
5. add the basting on each side, turn until the meat cook / kasha olesan nya dan dibalik sampai dagingnya matang
6. satay ready to serve with chilli dressing / sate nya siap disantap dengan sambal kecap.

This Chicken Satay Is The Perfect Summer Recipe
This is a Thai-style Chicken Satay complete with an Indonesian peanut sauce to finish it off. The perfect summer recipe for the grill if you ask me.

Chicken Marinade: 1 1/2 lbs of boneless chicken thighs makes 12 skewers
1/2 cup avocado oil (any other neutral oil is fine)
1 oz fresh lemon grass (1 large stick of lemongrass)
8 cloves of fresh garlic
1/2 cup fish sauce
1 1/2 tbsp curry powder
4 kefir lime leaves (sub with the zest of 1 lime)
1/4 cup lime juice
Indonesian style peanut sauce:
2 tbsp avocado oil
1 large or 2 medium shallots small dice
5 garlic cloves small dice
1 1/2 Fresno chilis small diced
1 1/2 cups coconut milk
3/4 cups peanut butter (crunchy)
2 tbsp dark soy sauce
2 tbsp sweet soy sauce or kecap manis (sub with regular soy sauce)
2 tbsp lime juice

Ingredients:-
3 boneless chicken breasts, cut into thin stripes
1 package wooden skewers
For the Marinade:-
¼ cup minced lemongrass, fresh or frozen
2 shallots, sliced
4 cloves of garlic
1 tsp. Red Chilli powder
1 inch piece Galangal/ginger
1 tsp. Turmeric powder
2 tbsp. Coriander powder
½ tsp. Cumin powder
2 tbsp. Light soy sauce
3 tbsp. Fish sauce
2 tbsp. Brown sugar
2 tbsp. Vegetable oil
Salt as required
Peanut sauce:-
1 cup Peanuts, roasted
2 cloves of garlic
½ tsp. Dark soy sauce
2 tsp. Sesame oil
2 tbsp. Brown sugar
2 tbsp. Fish sauce
1 tsp. Tamarind paste
½ tsp. Chilli powder
⅓ cup Coconut milk
Method:-
- Grind lemongrass, shallots, garlic, ginger, red chilli powder, turmeric powder, coriander powder, cumin powder, fish sauce, brown sugar, soy sauce, salt and vegetable to a smooth paste using some water.
- Add chicken to this mixture and refrigerate for a minimum of 30 minutes.
- Grind together, roasted peanuts, brown sugar, red chilli powder, sesame oil, tamarind pulp, garlic, fish sauce, salt, soy sauce and a part of coconut cream to a smooth paste.
- Heat a pan and add the peanut sauce and remainder of the coconut cream to it. Simmer for no more than 3 minutes and turn the flame off.
- Reserve bamboo skewers in cold water for a minimum of 2 hours and skewer the chicken pieces to them.
- Heat oil in a grilled pan and grill the chicken skewers in it for a minute and a half each side.
- Serve with the peanut sauce.
Malaysian Chicken Satay is ready to eat!
