How To make Sante Fe Grilled Beef Steak
1 lb flank steak
1 tsp ground cumin
1 14.5oz can Diced tomatoes w/Garlic and onion
1 15.25oz can Golden Sweet whole kernal corn -- drained
1/2 c thick and chunky salsa
1/2 c diced green bell pepper
1/2 c sliced green onions
Rub cumin over meat. Season with salt and pepper, if desired. Grill or broil meat to desired doneness. (6-8 minutes for medium rare; 8-10 minutes for medium; 10-12 minutes for well done, turning once).
Combine tomatoes, corn, salsa, green pepper and onion. Thinly slice meat and serve over vegetables. Serve with lime wedges and cilantro, if desired.

How to Grill a Tri-Tip Steak, Santa Maria Style | Santa Maria Grill | Smoked Tri Tip
Shop at Cabela's I left the 1 1/2tsp Achiote Seeds or Annatto Seeds of the lists of ingredients on the video. So make sure you include it. I cooked this on my Santa Fe grill which is very close to a Santa Maria Grill. So today on Texas Style Cuisine please try my tri tip roast.
This is an excellent recipe for grilling a Tri-Tip Steak. One of my followers CENCAL805 SGV818 supplied the recipe. He lives in central California and says this is his favorite way to grill a tri tip. This tri tip roast is at its best at medium rare cooked over a live fire. I will put a link to go to the first video and see his comments. I have included his recipe below. I get a lot of questions about grilling tri tip roast so I wanted to give another example of a way to grill a tri tip steak. So if you want to know how to grill a tri tip Santa Maria style then here is a version you will enjoy. You may want to check out my smoked tri tip video also. Tri-Tip Recipe
Marinade
1 1/2tsp Achiote Seeds or Annatto Seeds
1cup Canola Oil
6 Garlic Cloves minced
1tsp Black Pepper
1tsp Salt
1/4-1/2tsp Sugar
Toast achiote seeds in a pan and add oil
Cook into seeds begin to release color into oil
add other ingredients into marinade and mix
Strain out the seed.
Place two tri-tips into a ziplock bag and cover with marinade
Marinade for 24 hours
Set up grill for a medium high heat 350°
Grill each side for 10 minutes
Raise grill and cook 10 more minutes on each side
Wrap steaks in foil and grill each side 10 minutes
Rest steaks for 10 minutes
Unwrap steaks and rest an additional 5-10 minutes
Slice steaks across grain and serve
